Plus, these cookies are the perfect recipe for almost any occasion. Easy Hot Chocolate Cake Mix Cookies
Ingredients
- 15.25 oz. Betty Crocker Milk Chocolate Cake Mix {1 box} Or Betty Crocker Chocolate Fudge Cake Mix
- 8 oz. Hot Chocolate M&M’s {1 bag}
- 1 cup Dehydrated Mini Marshmallow Bits
- ½ cup Canola or Vegetable Oil
- 2 eggs
Instructions
- Combine cake mix, eggs, and oil in large mixing bowl, and beat well.
- Stir in M&M’s and Marshmallow Bits, and mix well with spoon.
- Chill dough in refrigerator for 1 hour.
- Drop onto ungreased non-stick Cookie Sheet in rounded balls.
- Bake for approx. 7 – 9 minutes at 350 degrees, or until done. ENJOY!
Notes
Pour in the M&M’s. {I layered by color}
Add the Mini Marshmallows.
Put the silver jar topper on top, place a round scrap of scrapbook paper {or brown paper bag cut into a circle} on top, then screw on the jar’s lid. {or you could use a doilie like I did here}
Wrap ribbon or twine around the silver lid.
Optional: Use your Silhouette or Letter Stickers to add the words ‘Cookie Mix’. Attach a Label with Baking Instructions:
Attach a label {or you can add the instructions to the top of the jar’s lid} with the following baking instructions.
Beat together 2 eggs and ½ cup Vegetable or Canola Oil in medium bowl.
Pour in entire contents of jar, and stir well with spoon.
Chill dough for 1 hour in the refrigerator prior to baking.
Then, drop onto ungreased non-stick cookie sheet in rounded balls.
Bake for approx. 7 – 9 minutes {or until done} at 350 degrees.

How many does this make? Oh, for anyone looking at palm, they keep the marshmallow bits in the hot chocolate area, not by the marshmallow section!

Would regular mini marshmallows work almost as well? I understand they would melt a little, but I was hoping to make these with ingredients I had on hand.

Well, I can say DO NOT try these with mini marshmallows! LOL. The cookie itself was good, chewy and chocolaty, even if the dough was a little oily to work with. But the mini marshmallows completely melted, leaving big craters in the cookies, and trails of caramelized crunchiness all over the tray. Thank goodness for parchment paper, right? My son loved the flavor, so for the rest of the dough I scooped it into paper lined mini muffin tins and baked them that way. The marshmallows were contained, so all the gooey goodness stayed where it should, and looked more appealing that way.
