  • Spice Cake Mix – If you are unable to find a Spice Cake Mix, I’ll show you in the recipe instructions how to use a Yellow Cake Mix instead.
  • Cinnamon
  • Powdered Sugar
  • Butter – Vegetable Oil or Canola Oil can be substituted if you want to make these cinnamon sugar cookies with no butter.
  • Eggs

How to Make Cinnamon Sugar Cookies

It’s actually SO easy to make this soft cinnamon cookies recipe!

Here’s what you’ll do…

1. Start by whisking together your Cake Mix and Cinnamon.

2. Then add in the Melted Butter & Eggs, and mix well.

3. Chill your dough in refrigerator.

4. Next, you’ll line your baking sheets with parchment paper.

5. Now comes the fun part… rolling cookie dough balls in powdered sugar & placing them on the cookie sheets.

6. Bake your cookies in the oven, then allow to cool on wire racks when done.

Ingredients 

  • 13.25 ounces Betty Crocker Spice Cake Mix, (if using a 15.25 oz. box, increase butter to 1/2 cup)
  • 1 3/4 teaspoons Ground Cinnamon
  • 1/3 cup Melted Butter, (Vegetable or Canola Oil can be substituted)
  • 2 large Eggs
  • 2/3 cup Powdered Sugar

Instructions 

  • Gather your ingredients.
    Ingredients for cookies with cinnamon and sugar.
  • Whisk together Cake Mix and Cinnamon in large mixing bowl.
  • Add in Melted Butter (or oil) and Eggs, and mix with hand mixer or stand mixer until well combined.
  • Cover dough and chill in refrigerator for 2 hours.
  • After dough has chilled, preheat oven to 350 degrees.
  • Line large baking sheets with parchment paper.
  • Roll cookie dough into 1 tablespoon sized rounded balls.
  • Then roll each ball in powdered sugar until well coated. (The key to perfect crinkles is small dough balls with lots of powdered sugar coating them.)
  • Transfer cookie dough balls to cookie sheet.
  • Bake on center oven rack for 7 – 13 minutes, or until done. (Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets.)
  • Remove from oven and allow to cool on cookie sheets for 5 minutes.
  • Transfer cookies to wire racks to finish cooling, and ENJOY!

Notes

  • *Spice Cake Mix Substitution: If you can’t find a spice cake mix, try this as a substitute: Use a Yellow Cake Mix, and whisk in the following: 1 3/4 tsp. Ground Cinnamon, 1/2 tsp. Ground Ginger, 1/4 tsp Ground Nutmeg, 1/4 tsp. Ground Cloves.
  • Butter: When it comes to Cake Mix Cookies, salted or unsalted butter can be used, as the cake mix will have a little salt in it. However, I’ve found that salted butter will result in superior flavor.
  • Make Ahead Baking Tips: Cake mix cookies are SO easy to start making ahead of time! The cookie dough can be made today, then stored covered in your refrigerator up to 2 days prior to baking your cookies.
