It’s actually SO easy to make this magically delicious Lucky Charms cookie recipe!
Here’s what you’ll do…

1. Separate your marshmallows from the cereal.
2. Then mix your cake mix, butter, and eggs together in a large bowl.
3. Carefully stir in some Lucky Charms marshmallows to the cookie batter with a large spoon. Set aside your remaining Lucky Charms marshmallows.
4. Now cover your dough, chill in refrigerator, then bake after chilled.
5. As soon as you remove them from the oven, press additional marshmallows onto the top of cookies while they’re still warm. That will give them a fun little decorated top.

Now all that’s left to do is transfer your cookies to a baking rack to cool, serve & DEVOUR!

St. Patrick’s Day Cookies

Ingredients
- 13.25 ounces Betty Crocker Vanilla Cake Mix, (if using a 15.25 oz. box, increase butter to 1/2 cup)
- 1/3 cup Melted Butter, (Vegetable or Canola Oil can be substituted)
- 2 large Eggs
- 1 3/4 cups Lucky Charms Marshmallows
Instructions
- Gather your ingredients.

- Separate 1 3/4 cups of Lucky Charms marshmallows from cereal, and set aside.
- Combine Cake Mix, Melted Butter (or oil), and Eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
- Then, with a large wooden spoon, gently stir 1 1/4 cups of Lucky Charms marshmallows into the batter, making sure not to break up the marshmallows as you stir.
- Set the remaining 3/4 cup of Lucky Charms marshmallows aside for later. (You'll be using them to press onto the top of the cookies as soon as they come out of the oven.)
- Cover dough and chill in refrigerator for 2 hours.

- After dough has chilled, preheat oven to 350 degrees.
- Line large baking sheets with parchment paper.
- Form cookie dough into 1 1/2 tablespoon sized rounded balls and transfer to cookie sheet.
- Bake on center oven rack for 7 – 13 minutes, or until done. (Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets.)
- As soon as you remove cookies from oven, gently press a few Lucky Charms marshmallows on top of cookie, to give it a pretty finished look.
- Allow cookies to cool on cookie sheets for 5 minutes.
- Transfer cookies to wire racks to finish cooling, and ENJOY!

Notes
- Butter: When it comes to cake mix cookies, salted or unsalted butter can be used, as the cake mix will have a little salt in it. However, I’ve found that salted butter will result in superior flavor.
- Storage Tips: After baked, you can store these tasty cookies at room temperature in an airtight container for up to 3 days. That makes these cookies an ideal make ahead treat for St. Patrick’s Day!
