Baking up a batch of these strawberry cookies from cake mix is going to be SO easy!
Just follow these simple step-by-step instructions:
1. Prepare your strawberry cookie dough by combining the ingredients in large mixing bowl, and then mixing until well combined.
2. Then cover the dough and chill in your refrigerator.
3. After dough has chilled, preheat your oven and line baking sheets with parchment paper.
4. Form cookie dough balls, and roll in powdered sugar until well coated. (see recipe for my tricks)
5. Bake until done, and allow to cool on wire racks before devouring!

Strawberry Cake Mix Cookies

Ingredients
- 15.25 ounces Pillsbury Strawberry Cake Mix, (*see notes below)
- 1/2 cup Melted Butter, (Vegetable or Canola Oil can be substituted)
- 2 large Eggs
- 3/4 cup Powdered Sugar
Instructions
- Gather your ingredients.

- Combine Cake Mix, Melted Butter (or oil), and Eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
- Cover dough and chill in refrigerator for 2 hours.
- After dough has chilled, preheat oven to 350 degrees.
- Line large baking sheets with parchment paper.
- Pour powdered sugar into small bowl and set aside.
- Roll cookie dough into 1 tablespoon sized rounded balls.
- Then roll each ball in powdered sugar until well coated. (The key to perfect crinkles is small dough balls with lots of powdered sugar coating them.)
- Transfer cookie dough balls to cookie sheet.
- Bake on center oven rack for 7 – 13 minutes, or until done. (Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets.)
- Remove from oven and allow to cool on cookie sheets for 5 minutes.

- Transfer cookies to wire racks to finish cooling, and ENJOY!

- *Cake Mix Box Variations: If using a 13.25 oz. Betty Crocker Strawberry Cake Mix, simply reduce the amount of Butter or Oil to 1/3 cup.
- Butter: When it comes to Cake Mix Cookies, salted or unsalted butter can be used, as the cake mix will have a little salt in it. However, I’ve found that salted butter will result in superior flavor.

I was wondering”” Has anyone frozen these cookies? If so please let me know the results. If you would recommend freezing. these are so easy and really on the exclamation point I did notice that I had to cook them a little longer than 7 minutes, and I needed more than a tablespoon to make a decent size cookie. But I absolutely love them so thank you!
