Yes. In this slow cooker casserole recipe there is no need to add additional water when cooking.

Instead of water, you will use evaporated milk to ensure this casserole made in the slow cooker is loaded with as much rich and creamy flavor as possible.

How to Make Crockpot Chicken and Rice

It’s actually SO simple to make this delicious crockpot dinner casserole…

1. Start by spraying the inside of your Crockpot with a non-stick cooking spray.

2. Then mix together the Soup, Milk, Ranch Seasoning, Rice & Bacon in a mixing bowl.

3. Layer the tenderloins and then the soup mixture in Crockpot.

4. Cook your casserole in the Crockpot per the instructions in the recipe card below.

5. While it’s cooking, stir occasionally and then continue cooking.

6. Finally… once done, serve it up and ENJOY!

Ingredients 

  • 2 pounds Chicken Tenderloins
  • 2 cans Campbell's Cream of Chicken Soup, 10 ounce cans
  • 12 ounce can Evaporated Milk
  • 1 ounce packet Hidden Valley Ranch Seasoning (or 3 tablespoons of this Buttermilk Ranch Dressing Mix Recipe)
  • 2 cups uncooked Long Grain Rice
  • 6 slices Bacon, cooked and chopped
  • 1 cup shredded Mild Cheddar Cheese
  • Optional: 4 Green Onions, chopped for garnish

Instructions 

  • Spray inside of 5 - 6 quart Crock Pot with non stick cooking spray.
  • Combine Soup, Evaporated Milk, Ranch Seasoning, Rice, and Bacon in mixing bowl, and stir until well combined.
  • Place Tenderloins in bottom of Crockpot, then pour mixture from bowl over chicken.
  • Cover Crockpot and cook on High for 2.5 hours or LOW for 5 hours.
  • Then remove lid, carefully stir rice mixture and chicken all together thoroughly, cover, and cook on HIGH for 30 more minutes, or LOW for 1 more hour, or until done.
  • Then stir entire mixture again, top mixture with Cheddar Cheese and cook for additional 5 minutes before serving.
  • Optional: Garnish with chopped Green Onions. ENJOY!

    I’m out of bacon but I always keep a jar of leftover bacon drippings in my fridge and added about a tsp of that instead. Soooo good! I do want to remake it with the actual bacon but this was a good sub in a pinch! Thank you for sharing this recipe.

    This sounds like an upgraded version of what we, in the south, call chicken bog. It’s so popular, we even have cook offs. Ours is just chicken, kielbasa, and rice cooked in chicken stock and seasonings. And it used to be considered poor man’s food, but we still love it! Your recipe looks and sounds delicious.
