Ingredients

You’ll just need a few simple ingredients to make the BEST Chicken Rice Broccoli Casserole!

Add the following to your next grocery list to make sure you’ve got everything on hand…

  • Cooked Chicken, Cubed – Rotisserie Chicken works great, too!
  • Frozen Broccoli Florets – thawed
  • Cooked White Rice – Long Grain rice works the best
  • Cream of Chicken Soup
  • Sour Cream
  • Ranch Seasoning Packet – or Homemade Buttermilk Ranch Mix
  • Shredded Mild Cheddar Cheese – Sharp Cheddar can be substituted
  • French Fried Onions – for a flavor-packed crunchy topping
  • Salt – to bring out the flavors
  • Pepper – optional

You’ll also need a 9×13 baking dish to get the job done, too.

How to Make Chicken Broccoli Rice and Cheese Casserole

You won’t believe how easy it is to make this ultimate comfort food casserole at home!

Here’s what you’ll do…

1. First you’ll want to remove your broccoli florets from the freezer, so they can thaw.

2. Once they have thawed, you can preheat your oven.

3. Then spray a 9×13 casserole dish with nonstick cooking spray.

4. If any broccoli florets are large, simply cut into smaller, bite sized pieces.

5. Then stir your Chicken, Broccoli, Cooked Rice, Soup, Sour Cream, Ranch Seasoning and 1 cup of Shredded Cheddar Cheese in a large mixing bowl, until well combined.

6. Transfer the mixture to your casserole dish, and spread it out evenly.

7. Then cover your casserole dish with aluminum foil, and bake as specified.

8. After baking for 30 minutes, remove your foil, and sprinkle casserole with remaining Shredded Cheddar Cheese and French Fried Onions.

9. Then continue baking as specified, uncovered, or until the cheese has melted.

10. Season with salt and pepper to taste, and ENJOY your cozy casserole!

How to Store Leftover Chicken Broccoli Casserole

You can store any leftover chicken broccoli casserole in your refrigerator for up to 3 days, in an airtight container. You can also store it for up to 1 month in the freezer.

To reheat, simply transfer a portion to a microwave safe dish. Then cover it with paper towels, and reheat for 30 seconds at a time (stirring each time) until hot.

Make it extra amazing when you add a little extra cheese on top for the last few seconds of microwaving!

Chicken Broccoli Rice and Cheese Casserole

Ingredients 

  • 2 cups Cooked Chicken, cubed, (or cubed Rotisserie Chicken)
  • 10 ounces Frozen Broccoli Florets, (thawed)
  • 2 cups Cooked White Rice, (Long Grain Rice works the best)
  • 21 1/2 ounces Campbell’s Cream of Chicken Soup, (2 cans - 10¾ ounces each)
  • ½ cup Sour Cream
  • 3 tbsp Ranch Seasoning, (or 1 oz. Ranch Packet)
  • 2 cups Shredded Mild Cheddar Cheese
  • 2 cups French Fried Onions
  • teaspoon Salt and Pepper to taste

Instructions 

  • Gather your ingredients.
  • Preheat oven to 350 degrees.
  • Spray 9×13 casserole dish with nonstick cooking spray.
  • Transfer completely thawed broccoli florets to cutting board, and cut up any large pieces into smaller, bite sized pieces.
  • In large mixing bowl, combine Chicken, Broccoli, Cooked Rice, Soup, Sour Cream, Ranch Seasoning, and 1 cup of Cheese. Stir until well combined.
  • Transfer mixture to casserole dish, and spread out evenly.
  • Cover with aluminum foil, and bake for 30 minutes.
  • After 30 minutes, remove foil, evenly top with remaining 1 1/2 cups Shredded Cheese, and sprinkle with French Fried Onions. Then bake UNCOVERED for 10 - 15 more minutes, or until cheese has melted.
  • Season with salt and pepepr to taste, and ENJOY!
