Can You Make A Casserole In A Crock Pot?

You sure can… and it’s SO much easier than you think! For this recipe, you’ll skip the traditional 9×13 casserole dish and using a Crock Pot instead.

The Crock Pot does the same job as a traditional casserole dish would, when preparing this Chicken Broccoli Rice Casserole.

You can even use a specialized Crock Pot shaped like a traditional 9×13 casserole dish, but it really isn’t necessary for this recipe.

Just a standard 5 – 6 quart crockpot will work fine!

Ingredients

You’ll just need a few simple ingredients to make the BEST Broccoli Cheese Rice Casserole in your crock pot!

  • Chicken Tenderloins – fresh or thawed if previously frozen.
  • Cream of Chicken Soup
  • Evaporated Milk
  • Ranch Packet – or Hidden Valley Copycat Ranch Seasoning!
  • Rice
  • Frozen Broccoli – thawed
  • Mild Cheddar Cheese – or sharp if you’re feeling wild!

That’s it. Just 7 ingredients are all you’ll need to create this amazing comfort food casserole.

Do You Need To Brown Chicken Before Putting In The Slow Cooker?

No you don’t.

For this slow cooker casserole, you’ll simply place the raw chicken tenderloins right into the Crock Pot.

How To Cook Rice In A Crock Pot?

My trick for preparing uncooked rice in a Crock Pot is to combine the rice with other wet ingredients.

Then I add the combined ingredients to the slow cooker. This allows the rice to cook to perfection along with all of the other ingredients.

How to Make Crock Pot Chicken Broccoli Rice Casserole

It’s actually SO simple to make this delicious crockpot broccoli cheese casserole…

1. Start by spraying the inside of your Crockpot with a non-stick cooking spray.

2. Then mix together the Soup, Milk, Ranch Seasoning, & Rice in a mixing bowl.

3. Layer the tenderloins and then the soup mixture in Crockpot.

4. Cook your casserole in the Crockpot per the instructions in the recipe card below.

5. When it’s almost done, add your broccoli pieces to the top and continue cooking as instructed.

6. Finally… once done, serve it up and ENJOY!

Crock Pot Chicken Broccoli Rice Casserole

This Crock Pot Chicken Broccoli Rice Casserole will be the EASIEST dinner you'll make all week! Ingredients 

  • 2 pounds Chicken Tenderloins
  • 20 ounces Campbell's Cream of Chicken Soup, (two 10 ounce cans)
  • 12 ounces Evaporated Milk
  • 1 ounce packet Hidden Valley Ranch Seasoning (or 3 tablespoons of this Homemade Buttermilk Ranch Mix Recipe)
  • 2 cups uncooked Long Grain Rice
  • 10 ounces Frozen Broccoli Florets, thawed
  • 1 cup shredded Mild Cheddar Cheese, (sharp can be substituted)

Instructions 

  • Spray inside of 5 - 6 quart Crock Pot with non stick cooking spray.
  • Combine Soup, Evaporated Milk, Ranch Seasoning, and Rice in mixing bowl, and stir until well combined.
  • Place Tenderloins in bottom of Crockpot, then pour mixture from bowl over chicken.
  • Cover Crockpot and cook on High for 2.5 hours or LOW for 5 hours.
  • Remove lid, carefully stir rice mixture and chicken all together thoroughly, add broccoli to top of mixture, cover, and cook on HIGH for 30 more minutes, or LOW for 1 more hour, or until done.
  • Then stir entire mixture again, top mixture with Cheddar Cheese and cook for additional 5 minutes before serving. ENJOY!
