- Sour Cream – I like to use full fat Sour Cream for maximum richness.
- Mayonaisse
- Garlic Powder
- Black Pepper

Crockpot Spinach Artichoke Chicken Recipe
Ingredients
- 3 lbs. Boneless Skinless Chicken Breasts fresh or thawed
- 6 oz. Frozen Chopped Spinach thawed
- 6 oz. Artichoke Hearts drained and chopped
- 2 cups shredded Pepper Jack Cheese
- 1 cup shredded Parmesan Cheese
- 8 oz. package Philadelphia Cream Cheese softened to room temp, then cubed
- 1/4 cup Sour Cream
- 1/4 cup Mayo
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Pepper
Instructions
- Place chicken in crockpot and cook chicken on HIGH for 2.5 hours, or on LOW for 5 hours. (covered)
- After 2.5 hours on HIGH or 5 hours on LOW, drain juices from Crockpot.
- Mix together remaining ingredients in medium bowl.
- Spread mixture evenly over chicken, and cook on HIGH for 1 additional hour (covered), or until done. ENJOY!!

Can’t wait to try this! I’ve never just put chicken in the crockpot by itself though. Should I pour broth in with the chicken? Then dump the broth out before adding the spinach/artichoke stuff?

After fielding questions like “What is an artichoke?” and “Why are we having spinach?” I am happy to report that my young skeptics enjoyed this dinner. I thought there would be too much topping but with four pounds of chicken, I could have used more. I only had grated parmesan cheese so I halved the recommended amount and it turned out great. With some reduced fat items, the calorie count wasn’t too bad either. Thanks for bringing some much needed variety to our dinner table!
