Can’t wait to try this! I’ve never just put chicken in the crockpot by itself though. Should I pour broth in with the chicken? Then dump the broth out before adding the spinach/artichoke stuff?
Heidi says
Hi Katelyn ~ you certainly can if you would like to, but it’s not necessary, as the chicken will quickly release its own juices that it will cook in. Hope that helps! 🙂
Rebecca says
What kind of sides are y’all puttig with this? It looks awesome!
Heidi says
I think one of these 10 potato side dishes would be a yummy compliment. Maybe an Instant Pot Sweet Potato or my Heavenly Hashbrown Casserole? https://thefrugalgirls.com/ultimate-potato-side-dish-recipes
This is such a fun recipe, you might as well go all out with your sides as well 🙂

After fielding questions like “What is an artichoke?” and “Why are we having spinach?” I am happy to report that my young skeptics enjoyed this dinner. I thought there would be too much topping but with four pounds of chicken, I could have used more. I only had grated parmesan cheese so I halved the recommended amount and it turned out great. With some reduced fat items, the calorie count wasn’t too bad either. Thanks for bringing some much needed variety to our dinner table!
Heidi says
You’re very welcome, Hope! I’m so glad you enjoyed the Spinach Artichoke chicken! I agree… it can definitely be an adventurous dinner for kids with so many new flavors. After having Spinach Artichoke dip around the holidays, my teen boys gobbled this chicken up. 😉
Jessica Rodrigues says
This was amazing! Doubled the recipe since there is 6 of us and it is so filling that we didn’t need to! Added peppercinis for those who wanted spice and we have a permanent family favorite. Thank you! To find a meal all 4 kids love is no easy feat.

Aww ~ you’re very welcome, Jessica! So glad to hear everyone loved it! My kids love this dish, too! 🙂
