You’ll just need the following simple ingredients to make the best Crock Pot Spinach Artichoke Chicken!

Add the following to your next grocery list to make sure you’ve got everything on hand…

  • Chicken Breasts – fresh or thawed if previously frozen.
  • Frozen Chopped Spinach – thawed
  • Artichoke Hearts
  • Pepper Jack Cheese – shredded
  • Parmesan Cheese – shredded, not grated
  • Cream Cheese – the higher quality cream cheese, the more AMAZING the flavor!
  • Sour Cream – I like to use full fat Sour Cream for maximum richness.
  • Mayonaisse
  • Garlic Powder
  • Black Pepper
  • Salt – to bring out the dreamy flavors.

You’ll also need a 5 – 6 quart Crockpot to get the job done.

It’s actually so EASY to make this Spinach Artichoke Chicken in your slow cooker!

Here’s what you’ll do…

1. Cook your chicken in your crockpot, and then drain and discard the juices.

2. Mix up your sauce in a mixing bowl.

3. Spread the sauce mixture over your chicken and continue cooking.

4. Once done, serve it up and enjoy every delicious bite!

Ingredients 

  • 3 lbs. Boneless Skinless Chicken Breasts, fresh or thawed
  • 6 oz. Frozen Chopped Spinach, thawed
  • 6 oz. Artichoke Hearts, drained and chopped
  • 2 cups shredded Pepper Jack Cheese
  • 1 cup shredded Parmesan Cheese
  • 8 oz. package Philadelphia Cream Cheese, softened to room temp, then cubed
  • 1/4 cup Sour Cream
  • 1/4 cup Mayo
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions 

  • Place chicken in crockpot and cook chicken on HIGH for 2.5 hours, or on LOW for 5 hours. (covered)
  • After 2.5 hours on HIGH or 5 hours on LOW, drain juices from Crockpot.
  • Mix together remaining ingredients in medium bowl.
  • Spread mixture evenly over chicken, and cook on HIGH for 1 additional hour (covered), or until done. ENJOY!!

    Can’t wait to try this! I’ve never just put chicken in the crockpot by itself though. Should I pour broth in with the chicken? Then dump the broth out before adding the spinach/artichoke stuff?

      Hi Katelyn ~ you certainly can if you would like to, but it’s not necessary, as the chicken will quickly release its own juices that it will cook in. Hope that helps! 🙂

    After fielding questions like “What is an artichoke?” and “Why are we having spinach?” I am happy to report that my young skeptics enjoyed this dinner. I thought there would be too much topping but with four pounds of chicken, I could have used more. I only had grated parmesan cheese so I halved the recommended amount and it turned out great. With some reduced fat items, the calorie count wasn’t too bad either. Thanks for bringing some much needed variety to our dinner table!
