- Cooked Chicken, Cubed – Cooked Rotisserie Chicken is a fantastic shortcut!
- Cooked White Rice
- Frozen Mixed Vegetables
- Cream of Chicken Soup
- Sour Cream
- Mayo – Either regular or light mayo will work.
- Butter
- Cheddar Cheese – I like using Sharp Cheddar for maximum flavor.
- Onion Powder
- Garlic Powder
- Salt – To bring out the flavors.
- Pepper

You won’t believe how easy it is to make this quick chicken casserole recipe at home!
Here’s what you’ll do…
1. First you’ll want to remove your mixed vegetables from the freezer, so they can thaw.
2. Once they have thawed, you can preheat your oven.
3. Then spray a 9×13 casserole dish with nonstick cooking spray.
4. Combine your ingredients, and add them to your casserole dish as specified.
5. Then cover your casserole dish with aluminum foil, and bake your simple chicken casserole in oven.
6. After baking for 30 minutes, remove the foil.
7. Top everything with shredded cheese, then continue baking uncovered as specified, or until the cheese has melted.

How to Store Leftovers
If you’re lucky enough to have any leftover chicken casserole, simply place it in an airtight container. Then, store it in your refrigerator for up to 3 days or the freezer for up to 1 month.
How To Reheat Leftovers
To reheat, simply transfer a portion to a microwave safe dish. Then cover it with paper towels, and reheat for 30 seconds at a time (stirring each time) until hot.
Make your chicken and rice casserole even better when you add some extra cheese on top for the last few seconds of microwaving!

Chicken Casserole Recipe

Ingredients
- 2 cups diced Cooked Chicken, (cooked turkey or rotisserie chicken can be substituted)
- 2 cups cooked White Rice
- 12 oz. pkg. Frozen Mixed Vegetables, thawed, (other frozen veggies can be substituted)
- 2 cups shredded Cheddar Cheese
- 21 oz Campbell's Cream of Chicken Soup, (2 cans, 10.5 oz. each)
- 1/2 cup Sour Cream
- 1/2 cup Mayonnaise
- 2 tbsp melted Butter
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/4 tsp Salt
- 1/8 tsp Pepper
Instructions
- Gather your ingredients.

- Preheat your oven to 350 degrees.
- Spray 9×13 casserole dish with cooking spray.
- Place thawed Mixed Vegetables in the bottom of the casserole dish.
- Top with cooked cubed Chicken, then add cooked Rice.
- In a mixing bowl, combine Soup, Sour Cream, Mayonnaise, Onion Powder Garlic Powder, Salt and Pepper, and mix well.
- Spread mixture evenly over the ingredients already in the casserole dish.
- Drizzle with melted butter, and cover with aluminum foil.
- Bake at 350 degrees for 30 minutes.
- After baking for 30 minutes, remove your foil.
- Top with Shredded Cheese.
- Continue baking UNCOVERED for approximately 10-15 minutes, or until the cheese has melted.
