One of the many things I love about living in Arizona, is all of the homegrown citrus fruit. There are orange trees, lime trees, grapefruit trees, and lemon trees galore!
And if you haven’t had Arizona Lemon Pie before, you’re in for a treat! Not only is the flavor outrageous, but it’s also the EASIEST pie you’ll ever make!
Trust me… this real lemon pie with fresh homemade filling will be like a surprise party in your mouth! And don’t worry… if you’re not in Arizona, just use lemons from your local grocery store. They’ll work just fine.

Ingredients
Round up these easy ingredients next time your at the grocery store…
- Lemons
- Sugar
- Butter – the higher quality the butter, the more AMAZING the flavor!
- Eggs
- Vanilla
- Pie Crust – I like to use this delicious Butter Pie Crust Recipe
- Cool Whip – for topping the pie

Supplies Needed
To make this lemon pie, you’ll need a good quality Kitchen Blender and a 9″ or 9.5″ Pie Plate.
How To Make A Lemon Pie
1. Preheat the oven.
2. Then carefully place a store bought or homemade pie crust into your 9″ pie plate.

3. Add the lemons, butter, sugar and vanilla to your blender and blend.

4. Then pour this mixture into the pie dish.
5. Place your pie in the oven to bake.
6. Once done, allow the pie to completely cool.
7. Then top with the entire container of Cool Whip.
8. After topping with Cool Whip, allow the pie to chill in the refrigerator as specified in the recipe before serving.

Lemon Pie

Ingredients
- 2 medium Lemons, (sliced, seeds removed, and rind left on*)
- 2 cups Sugar
- 1/2 cup Butter, softened, (8 tbsp.)
- 4 large Eggs
- 1 tsp. Vanilla Extract
- 1 Pie Crust, (Homemade Pie Crust or store-bought)
- 8 oz. Cool Whip, (for pie topping)
Instructions
- Preheat oven to 350 degrees.
- Prepare a pie dish with your pie crust, and flute edges.
- Add Lemons, Sugar, Butter, Eggs and Vanilla to your blender, and blend until well combined.
- Pour lemon mixture into pie crust.
- Bake for 40 - 45 minutes, or until done.
- Remove from oven and allow to cool completely.
- Then top with entire container of cool whip spread out evenly over pie, and transfer to refrigerator to chill for 1 hour.
- After it has chilled for 1 hour, slice, serve, and ENJOY!
- Storage Tip: Pie can be stored covered in refrigerator up to 3 days.
Notes
- *Lemon rinds will add some bite and bitterness to this pie, so if your lemon rinds are thick, I'd suggest using only a small part of the rind.
