As far as the texture goes, don’t expect crispy fried hash browns. This is a creamy rich comfort food dish that serves up hearty flavors the whole family will love. Think of it more like ridiculously delicious creamy mashed potatoes!

Or like meat and potatoes… made cozy!

Trust me, kielbasa and potatoes go together like peanut butter and jelly… they’re just a perfect match!

They come together to create an irresistible slow cooker casserole. A casserole that is simple to make, hearty, and magnificently packed with family pleasing flavors.

Just beware of the tantalizing aroma wafting through your home. It’s quite alluring…

So alluring, you might even be tempted to dive right into this glorious steaming Crock Pot casserole!

Instead, I recommend quickly dishing some out into bowls… being that the whole diving in the crockpot scenario could get a little messy… and crowded!

So what I’m trying to say is, you really need to add this savory dish to your menu for a fun new brunch/lunch/brinner/dinner the whole family will love!

It serves up familiar flavors without the fuss.

Come on… let’s grab the napkins and dive in!

  1. Tanya says:

Has anyone tried to make this with riced cauliflower instead of hash browns? I’m trying to think of ways to make this healthier.

    1. Heidi says:

I honestly haven’t tried that, Tanya… but if you do, let me know how it turns out!

  2. Christie says:

This is totally making me drool! I really love potatoes but when you top it off with some sausage it’s pure heaven in my mouth! Thanks for sharing this one!

    1. Heidi says:

You’re very welcome, Christie! They really are the perfect match, aren’t they? 🙂

  3. DJ says:

Could you use almond milk instead of evaporated milk?

    1. Heidi says:

I’ve honestly never tried that DJ, but if you do… let me know how it turns out!

  4. Elise says:

how would you recommend adding eggs to this dish? I was thinking about using beat eggs instead of the canned soup, but I wasn’t sure.
    Thanks !

    1. Heidi says:

Hi Elise… I’ve honestly never tried it that way – if you do, let me know how it turns out! 🙂

  5. Leisa McWatters says:

Has anyone made a low carb version of this with cauliflower instead of potatoes?

  6. Amy says:

Do I need to cook the sausage before adding it to the crockpot?

    1. Heidi says:

Hi Amy ~ as long as you use the precooked kielbasa sausage, you won’t need to cook it before adding it to the crockpot. Hope that helps! 🙂

  7. Melissa says:

I bought frozen uncooked sausage, would u cook them before putting in crockpot? Or would unthaw and put them in there cut up?

    1. Heidi says:

Hi Melissa ~ if you’ll be substituting uncooked sausage, you will want to cook your sausage first, then add it to the crockpot. Hope that helps!

  8. Michelle says:

Can I use real potatoes instead of hashbrowns?

    1. Heidi says:

Hi Michelle ~ I honestly haven’t tried, but I would be concerned they might not hold their from as well. You could try shredding and freezing your own potatoes and using those as a substitute to store bought hash browns. Hope that helps!

  9. Amy says:

This was soooo yummy. My husband loved it and kids ate it. That says a lot. I have picky teenagers ha. The only alterations I made was I added 1-2 tablespoons minced onion (I didn’t measure, I just poured it in)., and I didn’t measure the garlic, but I used the minced kind you buy in the jar, I think I used a little less than what the recipe called for. I also added a little shredded mexican cheese on top (it’s the only kind I had on hand at the time). This will be something I fix regularly. I am a mom of 3 and work 2-3 nights a week and the other days, I work days or half days and I sleep during the day. So this is super easy to throw in the crock pot and let it cook while I sleep before I go back to work again for the night. Easy way to feed the family. I heated up some black eyes peas to have as a side dish with it.
I didn’t have time to thaw my hash browns, so I put them in a big bowl and heated in the microwave for 30 seconds, stirred it and put it on another 30 seconds. It all worked out good.

    1. Heidi says:

I’m so glad to hear your hubby and teens loved this dish, Amy! Thanks for sharing your delicious twists, too… I’m happy to know this will be something you can fix regularly with your busy schedule. 🙂

  10. Angela Maus says:

I’m going to try this in my pressure cooker tonight.
