Tried this tonight. Was actually pretty good. A bit different but good none the less. I served with cilantro lime rice.
So glad you enjoyed it, Kara Jo! Cilantro lime rice sounds like the perfect side! 🙂
Could i add the salsa and pineapple in the beginning of the cooking process?
Hi Annie ~ the reason you’ll want to wait to add the salsa mixture until the end is that you’ll end up with a thicker and much more flavorful sauce. If you add the sauce at the beginning it will get diluted with the juices the chicken releases. Hope that helps! 🙂
I was thinking about eating it with tortilla chips. Kinda like a nacho without the cheese. What you think?
Tortilla chips are the perfect side!
If /when you mix the pineapple preserves and salsa together, could you use that as an actual dip for chips like pineapple salsa you buy in the store? Anyone try it before cooking it on the chicken? This recipe looks so yummy!
Hi Paige ~ for an actual dip for chips, I prefer making this fresh Pineapple Mango Salsa… it’s SO yummy!
