Here’s what you’ll need to grab at the grocery store this week…

  • Chicken – fresh or thawed if previously frozen.
  • Enchilada Sauce – use the recommended name brand for best flavor.
  • Mexican Cheese – use shredded cheese.
  • Mild Green Chiles – if you like it spicy, hot green chiles can be substituted.
  • Garlic Salt – to add outrageous flavor.

That’s it. Just 5 easy ingredients to create this slow cooker masterpiece!!

You’ll also need a 5 – 6 quart Crock Pot to get the job done.

Crockpot Enchilada Chicken Recipe

Let your slow cooker do the work tonight when you make this delicious cheesy 5 ingredient Crockpot Enchilada Chicken Recipe! Just 5 minutes of prep and dinner is done!

Ingredients

  • 3 lbs Boneless Skinless Chicken Breasts fresh or thawed
  • 10 oz. La Victoria Mild Red Enchilada Sauce (1 can)
  • 2 tsp Garlic Salt
  • 4 oz. Mild Green Chiles drained (1 can)
  • 4 oz. Kraft Mexican Shredded Cheese (1 cup)

Instructions

  • Place chicken in crockpot and sprinkle Garlic Salt evenly over chicken.
  • Cook chicken on HIGH for 3 hours, or on LOW for 6 hours. (covered)
  • After 3 hours, drain juices from Crockpot.
  • In a small bowl, mix together Enchilada Sauce and Green Chiles, and pour mixture over chicken.
  • Sprinkle Mexican Cheese over sauce and chicken, and cook on high for 30 more minutes (covered)
  • Remove chicken from crockpot, and serve with Cilantro Lime Rice. YUM!

      Making this for dinner! Distracted by my kids I added the sauce and Chile’s right away. Is that going to be s problem?

        Hi Crystal ~ it will still work, but the flavors will just be toned way back and the sauce will be thinner if you add everything at the beginning. When you drain the juices before adding the sauce you end up with a thicker more flavorful sauce. Hope that helps! 😉
