Go ahead and give Taco Tuesday a rest this week… and make this crazy EASY 5 ingredient Crockpot Enchilada Chicken Recipe instead!  Trust me, your whole family will love the cheesy goodness this yummy slow cooked Enchilada Style chicken dinner delivers.  Mine sure did!

This Easy Crockpot Recipe is such a tasty fun way to conquer your enchilada cravings.  It takes hardly any prep while serving up big flavors… a perfect fit for your busy schedule.  This scrumptious dinner is one big crowd-pleaser.

Crockpot Enchilada Chicken Recipe!

Let your slow cooker do the work tonight when you make this creamy red delicious Crockpot Enchilada Chicken Recipe!

Ingredients

  • 3 lbs Boneless Skinless Chicken Breasts fresh or thawed
  • 10 oz. La Victoria Mild Red Enchilada Sauce {1 can}
  • 2 tsp Garlic Salt
  • 4 oz. Mild Green Chiles drained {1 can}
  • 4 oz. Kraft Mexican Shredded Cheese {1 cup}

Instructions

  • Place chicken in crockpot and sprinkle Garlic Salt evenly over chicken.
  • Cook chicken on HIGH for 3 hours, or on LOW for 6 hours. {covered}
  • After 3 hours, drain juices from Crockpot.
  • In a small bowl, mix together Enchilada Sauce and Green Chiles, and pour mixture over chicken.
  • Sprinkle Mexican Cheese over sauce and chicken, and cook on high for 30 more minutes {covered}
  • Remove chicken from crockpot, and serve with Cilantro Lime Rice. YUM!

    Thanks for the recipe Heidi. I made this last night but used Cotija cheese instead of the Kraft cheese. I won’t lie, this recipe is delicious and everyone at the table agreed 🙂

    Making this for dinner! Distracted by my kids I added the sauce and Chile’s right away. Is that going to be s problem?

      Hi Crystal ~ it will still work, but the flavors will just be toned way back and the sauce will be thinner if you add everything at the beginning. When you drain the juices before adding the sauce you end up with a thicker more flavorful sauce. Hope that helps! 😉
