It takes just a few simple ingredients to create the ultimate chicken con queso dinner!

Here’s what you’ll need to grab at the grocery store this week…

  • Chicken – Fresh or thawed if previously frozen.
  • Salsa Con Queso – Use the recommended name brand for best flavor.
  • Rotel – Diced Tomatoes + Green Chilies.
  • Diced Green Chiles – If you like it spicy, hot green chiles can be substituted.
  • Garlic Salt – To add outrageous flavor.

How To Make Queso Chicken

This slow cooker queso chicken recipe practically defines effortless cooking.

Just follow these easy peasy steps…

1. Cook your chicken in your crockpot, and then drain and discard the juices.

2. Spoon the Queso over your chicken, sprinkle with garlic salt, then top it with Rotel and green chiles.

3. Continue cooking until your queso chicken is done.

This fabulous pollo con queso can be served up so many ways. To start, it’s extra tasty served with copycat Chipotle Cilantro Rice and a side of chips.

But… shredding it and using it for chicken queso tacos, burritos, and nachos? This my friends is pure magic! Just grab your favorite taco shells or soft tortillas. Cook Time: 3 hours 30 minutes
Total Time: 3 hours 35 minutes

Ingredients 

  • 3 lbs. Boneless Skinless Chicken Breasts, (fresh or thawed)
  • 3/4 cup Medium Salsa con Queso Dip
  • 10 oz. Mild Rotel, (drained)
  • 4 oz. Diced Green Chiles, 1 can (drained)
  • 1/2 tsp. Garlic Salt

Instructions 

  • Gather your queso chicken ingredients.
    Salsa con queso dip, garlic salt, Rotel, and green chiles.
  • Place chicken in Crock Pot, and cook on HIGH for 3 hours or LOW for 6 hours.
    Chicken in a slow cooker.
  • After 3 hours on HIGH or 6 hours on LOW, drain juices from Crock Pot.
  • Evenly spread Queso over chicken, then sprinkle with Garlic Salt. Top with Rotel and Green Chiles.
  • Cook on HIGH for 1/2 hour (covered), or until done.
    Queso chicken with tomatoes and green chiles.
  • Optional: Garnish with fresh chopped Cilantro and Enjoy!

    Would the cooking time be less if I only do 1-1.5 lbs of chicken breast tenders??

      Yes, you will need to shorten the cook time for that. I would just keep an eye on the chicken and check periodically to see how fast it’s cooking. ENJOY!

    Can I cook this but use velveeta instead of cheese queso from a jar? I have rotel and my kids would prefer chicken breast while not shredded. I didn’t know if you had any suggestions. This looks Devine and would be awesome to come home and make some Mexican rice to serve with it.

    When it says cook chicken in the crockpot, do you put anything with it, liquid or anything?

      Hi Vikki ~ you’ll cook just the chicken in the crockpot for the first step. No extra liquid is needed, because the chicken will quickly release juices and cook in its own juices. Hope that helps! 🙂

    This looks good! This is the first recipe I’ve seen so far that cooks the chicken first and then adds everything else and only cooks for 30 minutes. Still simple, but makes sure the other ingredients don’t get overcooked. I can’t wait to try this.
