Mix Cake Mix, Butter and Eggs until well combined
Stir in Butterscotch Chips
Chill dough in refrigerator
Line baking sheets with parchment paper
Roll cookie dough into balls, and place on cookie sheets
Bake in oven

Butterscotch Cake Mix Cookie Recipe
Ingredients
- 13.25 ounces Betty Crocker Butter Recipe Yellow Cake Mix
- 1/3 cup Melted Butter {Vegetable or Canola Oil can be substituted}
- 2 large Eggs
- 1 2/3 cup Butterscotch Chips {10 ounces}
Instructions
- Combine Cake Mix, Melted Butter {or oil}, and Eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
- Stir in Butterscotch Chips with large wooden spoon.
- Cover dough and chill in refrigerator for 2 hours.
- After dough has chilled, preheat oven to 350 degrees.
- Line large baking sheets with parchment paper.
- Roll cookie dough into 1 1/2 tablespoon sized rounded balls and transfer to cookie sheet.
- Bake on center oven rack for 7 - 13 minutes, or until done. {Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets)
- Remove from oven and allow to cool on cookie sheets for 5 minutes.
- Transfer cookies to wire racks to finish cooling, and ENJOY!

I just made these for my grand daughter (she loves butterscotch anything). I used a white Pillsbury cake mix as that is what I had and they are wonderful.

These are absolutely delicious–used yellow cake mix and added small amounts of ground ginger, cinnamon, and nutmeg for blending flavors with the butterscotch chips (about 1/3-1/2 pkg.). So nice to have all these recipes to whip up a batch in the morning in time for munching at lunch.

Hi Brooke ~ yes… you could make them the day before and store in an airtight container to keep fresh. Another option would be to make the cookie dough balls ahead of time and freeze to use later. Once you make the balls, just pop them on a cookie sheet and place in the freezer for a minimum of 1 hour. Then, transfer them from the cookie sheet into a freezer Ziploc, seal, and place back in the freezer. Once you’re ready to make your cookies, simply pull them out, place on a cookie sheet {with space to spread}, as you would if you were going to bake them, and set aside. Allow them to come to room temperature {about 15 minutes or so}, then bake as normal per the instructions. ENJOY!

I have to say that I was super skeptical about using a cake mix for cookies. I was afraid they’d come out more cakey than cookie. I’m so glad I’m wrong! My only tip is to not use the entire 11 oz. bag of chips. The dough had a hard time holding it’s shape because there was more chips than dough. I’m going to try this recipe with different cake mixes and chips now. I’m looking forward to trying strawberry cake mix with white chocolate chips.
