It takes just a few simple ingredients to make the BEST beef and cheese enchiladas!
Just grab these items on your next trip to the store…
- Flour Tortillas – I like to use the soft taco size.
- Ground Beef – Lean or not lean, the choice is yours.
- Taco Seasoning – You can customize your beef and cheese enchiladas with my easy 6 ingredient Homemade Taco Seasoning, or simply use your favorite store brand.
- Enchilada Sauce – I recommend using the name brand specified for best flavor.
- Shredded Cheddar Cheese – Shredded cheese from a bag will work just fine for this recipe.
- White Onion – Adds rich, savory flavor.
- Diced Green Chiles – For just a touch of tangy, mild heat.
- Cooking Oil – I prefer avocado oil.
- *optional toppings: Shredded Lettuce, Sour Cream, Easy Homemade Guacamole, and chopped Green Onions.

It’s actually so EASY to make these ground beef enchiladas with red sauce!
Here’s what you’ll do…
1. Brown your beef and sauté your onion, then stir in the taco seasoning.
2. Mix up the specified ingredients in a mixing bowl.
2. Then fill each tortilla, roll, and place in your baking dish as directed.
3. Pour the remaining sauce over your beef enchiladas, then sprinkle with cheese.
4. Bake your beef enchiladas until done.
Once done, garnish your cheese and beef enchiladas with shredded lettuce, sour cream, guacamole, and chopped green onions.

Beef and Cheese Enchiladas

Ingredients
- 8 large Flour Tortillas, (I like to use Mission Soft Taco size)
- 1.5 lb Ground Beef
- 1 serving Homemade Taco Seasoning, Or use a 1 oz. packet of your favorite store brand.
- 3/4 cup White Onion, chopped
- 26 oz. La Victoria Enchilada Sauce, (1 can)
- 4 oz. Diced Green Chiles, (1 can)
- 3 cups Shredded Cheddar Cheese, (use Sharp for extra flavor)
- 1 tbsp Avocado Oil, (Vegetable or Canola Oil can be substituted)
Instructions
- Gather your ingredients.

- Preheat oven to 350 degrees.
- Spray 9×13 casserole dish with Pam Nonstick Cooking Spray.
- Add Oil, Ground Beef, and Chopped Onions to frying pan.
- Brown beef / grill onions in frying pan.
- Drain juices from meat and stir in 1/3 cup water mixed with taco seasoning.
- Bring seasoned beef/onion mixture to simmer for 5 minutes.
- Transfer beef/onion mixture to medium bowl.
- Mix browned Beef and Onion, 1 cup Enchilada Sauce, 1 cup Cheese, and Green Chiles.
- Fill each tortilla with mixture, and roll up. Place seam side down in a row in your casserole dish.
- Pour remaining Enchilada Sauce over tortillas and sprinkle remaining grated cheese on top.

- Bake uncovered at 350 degrees for 30 minutes, or until hot and bubbly.

- Optional: Garnish with shredded Lettuce, Sour Cream, Guacamole, and chopped Green Onions. ENJOY!!
