You’ll just need a few simple ingredients to make the BEST Green Chile Chicken in your Crock Pot!

Here’s what you need to pick up on your next trip to the grocery store

  • Chicken Thighs – fresh or thawed
  • Green Chiles
  • Garlic Salt
  • Optional: Diced White Onions

It really does take just 3 easy ingredients to create this exceptional slow cooker chicken.

That’s it!!

You’ll also need a 5 – 6 quart Crockpot to get the job done.

Is It Okay To Marinate Chicken Before I Freeze It?

You sure can!

This Green Chile Chicken recipe works great as a freezer meal you can prepare later.

Simply add your ingredients to a freezer bag and place in the freezer.

Total Time: 3 hours 35 minutes

Ingredients 

  • 3 pounds Boneless Skinless Chicken Thighs, fresh or thawed
  • 4 ounces Green Chiles , (1 can)
  • 2 teaspoons Garlic Salt
  • ½ cup Diced White Onions (Optional)

Instructions 

  • Cook chicken in crockpot on HIGH for 3 hours or LOW for 6 hours. (covered)
  • After 3 hours on HIGH or 6 hours on LOW, drain juices from crockpot.
  • Mix together green chiles and garlic salt. (and optional onions)
  • Pour mixture over chicken, and cook on HIGH for 30 more minutes. (covered)
  • Remove chicken from crockpot, and shred with a fork.
  • Serve with all the fixins for tacos, or wrapped up in burritos. YUM!

    We LOVE this recipe! I usually drain and shred the chicken with my hand mixer after 3 hours, then I add the green chiles and a can of drained Rotel and garlic salt and let it cook for another 30 minutes. We make soft tacos topped with shredded lettuce and cheese. So yummy!!

    Could I get a similar taste if I use garlic powder instead of salt? I like to limit sodium.

      Melissa, Grace: Go ahead an cook the hole recipe then take it put it into individual portions then put them in the freezer

      You could, however the salt brings out the flavor, so it won’t be quite as flavorful.

    So do you mix the chilies and garlic salt with the drained juices? Is that what makes the sauce?! Or is the sauce just the chilies and the garlic salt?

      Hi Martha ~ you’ll remove the drained juices, toss, and then add the chiles and garlic salt. Hope that helps!

    I prepared this recipe at the fire station tonight only I substituted 4 fresh cloves of minced garlic for the garlic salt and used approx. 1 tsp of seasoned salt.
    Served it on fresh flour tortillas,chopped baby spinach,three blend mexican cheese and black beans.
    Thank you so much for the new recipe, the men really liked it!

    Never cooked with a crockpot before, so I’m curious…I just put the chicken in the crockpot with nothing else, as the recipe states, for 3 hours? It won’t burn or stick to the pot??

      Hi Cindy ~ yes… that’s correct. The juices from the chicken will quickly drain and the chicken will cook in that. After 3 hours I drain the juices and add in the sauce to the crockpot for another 30 minutes. That will allow for a thicker and tastier sauce. Hope that helps!!
