Add the following to your next grocery list, so you have everything on hand to make yours…

  • Boneless Skinless Chicken – Fresh or thawed if previously frozen.
  • Honey Chipotle Barbecue Sauce
  • Peach Jam or Preserves

Like most of my Easy Crockpot Recipes, you’ll also need a 5 – 6 quart Crock Pot to prepare this chipotle sauce chicken recipe.

How To Make Chipotle Chicken

This is the easy, no hassle chicken dinner you’ve been looking for. Just a few simple steps and your chipotle crockpot chicken is done!

Here’s what you’ll do…

1. Cook the chicken in your crockpot, and then drain and discard the juices.

2. Pour the sauce mixture over your chicken and continue cooking.

3. Once done, serve it up and enjoy every last wonderful bite!

Variations

Want to change things up a bit? How about making some chipotle wings!

Chipotle Chicken Wings

Use ingredients listed below, but substitute 2 1/2 lbs. fresh or thawed Chicken Wings. Shorten cook time to 2.5 hour on HIGH before draining and adding sauce. Pour sauce over wings, and cook for 30 more minutes.

For crispier chipotle honey wings, retain 3/4 cup of sauce mixture.

After wings have finished cooking, place on foil lined cookie sheet and brush with 1/4 cup of the remaining sauce and place under Broiler for 5 minutes. Then flip wings and brush with another 1/4 cup of sauce and place under broiler for an additional 5 minutes. Then flip once more, brush with remaining 1/4 cup of sauce, and place under broiler for 5 more minutes.

Ingredients 

  • 3 pounds Boneless Skinless Chicken Breasts, fresh or thawed
  • 9 ounces Sweet Baby Ray’s Honey Chipotle Barbecue Sauce , (use ½ of an 18 ounce Bottle)
  • 9 ounces Smucker’s Peach Preserves, (use ½ of an 18 ounce jar)

Instructions 

  • Gather your chipotle chicken ingredients.
    Peach preserves and honey chipotle barbecue sauce.
  • Cook Chicken in Crockpot on HIGH for 3 hours or LOW for 6 hours. (covered)
  • After 3 hours on HIGH or 6 hours on LOW, drain juices from Crockpot.
  • Mix together BBQ Sauce and Peach Preserves
  • Pour mixture over chicken, and cook on HIGH for 30 more minutes, or until done. (covered)

Notes

Honey Chipotle Barbecue Sauce Substitution: If you are unable to find the Sweet Baby Ray’s Honey Chipotle Barbecue Sauce at your local grocery store, you can try this substitute: 1 regular 16 oz. bottle of Sweet Baby Ray’s Barbecue Sauce, plus add Honey and Chipotle Chile Pepper to taste.

    What if you can’t drain the chicken because you’re at work? Also if you’re going to be away for a good 6-8+ hours coil you just add everything and leave it on low?

      Hi Tony… yes ~ you can cook on Low for 6 – 8 hours, or until done. You can also add all ingredients at the beginning… I just prefer draining juices and adding the sauce at the end for a thicker sauce. 😉

    these recipes look great… for the peach chipotle chicken… as well as some of the other chicken ones… can you freeze all the ingredients together and then thaw and cook?

      Hi Meg ~ yes… you could do that as well. In the end the sauce won’t be as thick as in the original recipe, but it will definitely still work. 🙂

    I want to make this chicken dish but do I cook the chicken plain or add water to the crock pot? I don’t want to ruin this dish but I think the chicken would burn if I put the chicken in the crock pot plain.
