Crockpot Chicken Noodle Soup Recipe with Rotisserie
There’s nothing quite as delicious as a big ol’ bowl of homemade Crockpot Chicken Noodle Soup made with rotisserie chicken!

What Noodle Do You Use For Chicken Noodle Soup?
Traditional Chicken Noodle Soups often use egg noodles. However, I personally prefer other types of noodles for flavor, texture and visual appeal.
For this recipe I used linguine noodles.
These are just slightly larger than spaghetti noodles. These noodles gave the soup such a lovely flavor and texture.
How Do You Make Soup More Flavorful?
Using fresh herbs is an easy way to upgrade the flavor of your soup.
So if you can find any fresh thyme at the store or in your garden, try using this instead of the dried thyme.
Same goes for the black pepper. Using fresh ground pepper is an easy way to enhance the flavors of this soup.
How Do You Make Crockpot Chicken Noodle Soup?
Using the Crock Pot is by far the easiest way to make chicken noodle soup.
Once your chicken and veggies are prepped, all you have to do is toss the ingredients in your slow cooker and walk away.
It really is that easy!
Get started by shredding your Rotisserie Chicken.
Next, chop your onion, and slice the carrots and celery.
Toss everything except the noodles in the Crock Pot for 3 1/2 Hours.
After 3 1/2 hours, you’ll add the noodles to Crock Pot for 45 More Minutes and your done!

Crockpot Chicken Noodle Soup Recipe
Ingredients
- 8 cups Swanson Chicken Broth (64 oz.)
- 3 cups cooked Rotisserie Chicken shredded* (see notes)
- ⅓ pound Linguine Noodles broken into quarters (approx. 5 ounces)
- 1 cup finely chopped Yellow Onion (about 1 med. onion)
- 1 cup peeled and very thinly sliced Carrots (about 3 med. carrots)
- ½ cup very thinly sliced Celery (about 1.5 stalks)
- 1 tablespoon Butter melted
- 3 Bay Leaves
- ½ teaspoon dried Thyme Leaves
- 1 teaspoon Pepper (I used freshly ground pepper)
- optional: add Salt to taste
Instructions
- Add all ingredients {except noodes} to 6 – 7 quart Crockpot and stir well.
- Cook on HIGH for 3 1/2 hours, or LOW for 7 hours, stirring 1-2 times.
- Add uncooked Linguine Noodles to Crock Pot, stir and cook on HIGH for 45 more minutes.
- Remove Bay Leaves, Stir, and Serve. ENJOY!

If I want to use wide egg noodles instead of pasta how much egg noodles should I add ?

This is a matter of taste. I use Mrs. Millers wide egg noodles BUT I cook them separately. They absorb so much liquid that adding them after your soup is done allows for a better measure. Frankly, I add more carrots, celery and chicken. A tip, if you add a half teaspoon of lemon juice YES LEMON JUICE, it adds to the flavor. You do not taste the lemon at all. It just kicks up the flavor. Another little trick. Add a small mixture of cornstarch and water, not enough to make it thick but just enough to make the broth heartier. Also use “no salt” or “low salt” broth or stock. Salt your soup at the end of cooking so you have more control.

It was delicious!?!? But the next day all the noodles absorbed the broth. Is it not made for leftovers, or should I just add more broth? Also could I add chicken bouillon to it?
