- Evaporated Milk – To make your soup extra creamy.

Like so many of my Simple Italian Recipes, you can prepare this creamy tomato tortellini soup recipe right in your slow cooker…
1. Spray crockpot with non-stick cooking spray.
2. Stir all ingredients (except the Parmesan & Parsley) in bowl to combine.

3. Pour contents from bowl into crockpot.
4. Cook in crockpot.
5. Add Parmesan Cheese & cook for the last 30 minutes.

6. Garnish with Parsley and more Parmesan if desired. Then serve, enjoy & DEVOUR!

How to Store Leftovers

To save your leftovers for later, simply store your soup in an airtight container and use within three days. When ready to eat, reheat on the stove over medium heat.

Tortellini Soup Recipe

Ingredients
- 10 oz. Cheese Tortellini, refrigerated
- 1/2 cup White Onion, finely chopped
- 23.2 oz. Family Sized Campbell’s Tomato Soup, (1 can)
- 14.5 oz. Diced Tomatoes, (1 can)
- 12 oz. Evaporated Milk, (1 can)
- 6 oz. Parmesan Cheese, (shredded)
- 3 tsp. Paprika
- 2 tsp. Basil
- 1 tsp. Onion Powder
- 1 Tbsp. Parsley, chopped (for optional garnish)
Instructions
- Gather your ingredients.

- Spray Crock Pot with non-stick cooking spray.
- Add all ingredients (except Parmesan and Parsley) to large bowl, and stir well.
- Pour contents from bowl into Crock Pot, and Cook on HIGH for 1.5 hours or LOW for 3 hours, stirring every 30 minutes.

- After cooking 1.5 hours on HIGH or 3 hours on LOW, add Parmesan Cheese, stir well, and cook for additional 30 minutes, covered.

- Optional: garnish with chopped Parsley and more Parmesan Cheese. Enjoy!!

This soup was so good! I used frozen tortellini, and didn’t mix the Parmesan cheese into the soup, just garnish when being served. Will make it again!

Hi Beth ~ you’ll use the fresh cheese filled tortellini from that comes refrigerated.
When adding the can of soup do you also add the water as instructed by the can?
