It takes just a few simple ingredients to make the BEST lasagna soup recipe in your dutch oven!
- Lasagna Noodles – Because this just wouldn’t be lasagna without the lasagna noodles!
- Italian Sausage – I used a mild sausage, but you could use a hot sausage for added flavor.
- Onion – I used a traditional white onion for this easy lasagna soup.
- Garlic – To add savory flavor.
- Campbell’s Tomato Soup Family Size Can – The perfect quick & easy base that I have also used for my popular Tomato Spicy Soup and Creamy Tomato Tortellini Soup.
- Diced Tomatoes – To save you time.
- Paprika – To add a hint of sweet and peppery flavor.
- Basil – See my tips for Preserving Fresh Basil!
- Salt – I like to use Sea Salt.
- Pepper – Use freshly ground pepper for added flavor.
- Evaporated Milk
- Olive Oil – used for browning your ground Italian sausage.
- Mozzarella Cheese – You really need both mozzarella and parmesan cheese to create the decadent lasagna flavors you’re looking for.
- Parmesan Cheese

How to Make Lasagna Soup
Making this easy recipe for lasagna soup is actually so simple!
Just follow these simple step-by-step instructions…
1. Preheat your dutch oven.
2. As your dutch oven is preheating, you can break your Lasagna Noodles into small pieces, and set aside.
3. Brown your Italian Sausage in the preheated dutch oven. After it is done, remove from your pot, drain and discard the grease, and set the sausage aside.
4. Then cook your Onions and Garlic in Olive Oil in the dutch oven.
5. Add your Tomato Soup, Diced Tomatoes, Evaporated Milk, Sausage, Lasagna Noodles, Paprika, Basil & Pepper to pot, and stir well.
6. Continue to cook your soup per the detailed instructions in the recipe card below.

7. Once done, ladle soup into bowls.
8. Complete your lasagna soup by topping it with delicious Mozzarella, Parmesan Cheese & Parsley.

Easy Lasagna Soup Recipe

Ingredients
- 8 uncooked Lasagna Noodles (broken into bite sized 1″ x 1″ pieces)
- 16 ounces Mild Ground Italian Sausage
- 1 1/2 cups diced White Onion
- 4 cloves Garlic, minced
- 23.2 ounces Campbell’s Family Size Tomato Soup (1 can)
- 14.5 ounces Petite Diced Tomatoes (1 can)
- 3 teaspoons Paprika
- 2 teaspoons Basil
- 1/2 teaspoon Salt
- 1 teaspoon Black Pepper
- 12 ounces Evaporated Milk (1 can)
- 2 tablespoons Olive Oil
- 6 ounces shredded Mozzarella Cheese
- 6 ounces shredded Parmesan Cheese
- 1 tablespoon Chopped Parsley for garnish (optional)
Instructions
- Gather your ingredients.

- Preheat 5-6 quart Dutch Oven on stove at Medium-High heat.
- After dutch oven has warmed up, add Italian Sausage and brown.
- Remove Italian Sausage from dutch oven and drain grease.
- Add Olive Oil, Onions and Garlic to dutch oven and saute until Onions become translucent (clear) in appearance.
- Add in Tomato Soup, Diced Tomatoes, Evaporated Milk, cooked Sausage, Lasagna Noodles, Paprika, Basil and Pepper, then stir well.

- Allow soup to come to a boil, stirring regularly.
- Once soup begins to boil, allow to boil for 3 minutes stirring frequently, then reduce heat to Medium-Low and allow soup to simmer for 25 minutes, stirring regularly.
- If soup thickens up too much, just add in regular Milk 1 tbsp. at a time to thin it down.

- Serve soup in bowls and top with Mozzarella and Parmesan Cheese. Garnish with Parsley.
