Crockpot Broccoli Cheese Soup Recipe

Ingredients

  • 16 oz. Frozen Cut Broccoli {1 bag} slightly thawed and roughly chopped.
  • 1 White Onion chopped
  • 4 tbsp. Butter
  • 10.5 oz. Campbell’s Cream of Mushroom Soup {1 can}
  • 12 oz. can Evaporated Milk
  • 10.5 oz. Campbell’s Cream of Celery Soup {1 can}
  • 10.5 oz. Campbell’s Cream of Chicken Soup {1 can}
  • 16 oz. Velveeta Cheese cubed {1 pound}
  • ¼ tsp. Pepper

Instructions

  • Spray Crockpot with Pam Cooking Spray
  • Saute chopped Onion in Butter, then transfer to large bowl.
  • Combine sauteed onions with all other ingredients in large bowl, and stir well.
  • Transfer ingredients into sprayed Crockpot, then cover with lid.
  • Cook on HIGH for 2 hours, or LOW for 4 hours. ENJOY!

    substituted evaporated milke for heavy whipping cream and added in some chicken broth. turned out DELICIOUS! I will be keeping this recipe for sure

    This soup was super easy to make! I love meals that are one pot recipes! Making it for my best friend who just gave birth! I did also add a little chicken broth since people said it was a little on the thicker side

      Hi Deb ~ it’s not recommended to freeze Velveeta because the texture just won’t be the same when it thaws, so this soup is better enjoyed the same day you make it. Hope that helps!

    Love Broccoli & cheese soup. It’s in the crockpot right now.!

    Had to sub an extra can of cream of mushroom, as I didn’t have cream of celery. Hope it turns out as good as it looks!
    Also I had some half & half for the canned milk, as i had some i needed to use! Fingers crossed!

    This looks amazing! I’ve read that it’s a pretty thick soup which I love but my husband does not. He also likes chicken in this soup too. I plan on adding chicken and chicken broth to the crock pot on Low for 4 hours, then adding the rest of the Ingredients on Low for 4 hours. Giving the chicken 8 hours to cook. I bet that’d be perfect!!!

      You can leave out the onion or try using Onion Powder instead as a shortcut.

    Making this tonight. Using cauliflower. Also hoping it will be ok in one and a half hours because I forgot to turn the crockpot on when I plugged it in. I did microwave cauliflower 3 min before I added it. Wish me luck.

    I made this today for dinner and it was GONE in a flash. My son and husband both said how much they liked it. It made about 6 decent sized servings. We each had two bowls of it. I was sad there were no leftovers, though. I used 2% Velveeta cheese, broccoli florets (because I hate the stalks and that is about all you get in the broccoli cuts bags), and one and a half cans of evaporated milk. One entire can was fat free, and the other 1/2 was regular canned milk. Also, I used the “healthy” cans of Campbell’s brand soups. So, that cut out some fat and salt, yet it was still delicious.

    This sounds like a winner! I have a large family to cook for and from the looks of the picture it serves about 5, I think. Could I double the recipe and cook it in my 7 qt Crockpot?

      You can freeze the rest in individual portion containers. Reheating does make it thicker so maybe add a couple drops of milk

      Hi Peggy ~ I used a 5 qt. Crock Pot for this recipe… anything between a 4 qt. and 6 qt. should work just fine. Enjoy! 🙂

        Freezing it worked pretty well. I put them in individual containers when I froze them. Thawed it for about 6hrs, then popped it in the microwave for about 1min. Came out a little thicker than when it was fresh, but not too bad.
