- Canned Corn – no need to drain
- Rotel – Diced Tomatoes + Green Chilies
- Ranch Seasoning Mix – use a packet or Homemade Ranch Seasoning
- Taco Seasoning Mix – use a packet or Homemade Taco Seasoning
- Onion Powder – to crank up the flavor
- Salt – I like to use Sea Salt
- Optional Toppings – Sour Cream, Shredded Cheddar & Green Onions
You’ll also need a 5 – 6 quart Crock Pot to get the job done.

Easy Crockpot Taco Soup Recipe
Ingredients
- 1 lb. Ground Beef browned and drained
- 14.5 oz. Beef Broth (1 can)
- 16 oz. Kidney Beans (1 can) drained
- 15 oz. Black Beans (1 can) rinsed and drained
- 14.5 oz. Petite Diced Tomatoes + liquid from can (1 can)
- 15 oz. Corn + liquid from can (1 can)
- 10 oz. Original Rotel – Diced Tomatoes & Green Chilies (1 can)
- 1 oz. Hidden Valley Ranch Seasoning Mix packet or 3 tbsp. Homemade Buttermilk Ranch Mix
- 1 oz. Taco Seasoning Mix packet or 3 tbsp. Homemade Taco Seasoning
- 1.5 tsp. Onion Powder
- ½ tsp. Salt
Instructions
- Add all ingredients (except garnish ingredients) to Crockpot and stir well.
- Cook on HIGH for 2 hours, or LOW for 4 hours.
- Top with a dollop of Sour Cream, Shredded Cheddar, Chopped Green Onions, and some Fritos for a delicious added punch of flavor! ENJOY!!
Notes
- If you'd like to freeze the soup for later, allow it to cool off after you have cooked it. Then transfer soup to Ziploc Freezer bags, and lay flat in the freezer to save space.

I usually just heat it through on the stove top if I don’t have a lot of slowcooker time. I think another post said 25-35 minutes. Since the meat is cooked before adding, it should be fine.

Taco soup is my favorite! I usually make it once a month at least and this is my go-to recipe!!! I make my own taco seasoning and I use the suggested buttermilk ranch recipe from this blog. Ive used different kinds of canned tomatoes…fire roasted instead of petite diced are my favorite. Either way it always turns out amazing!

I have made a different version of this for many years now, and it is an all time favorite. I have always used chicken broth instead of the beef broth and still use the ground beef. I also put two cans of corn in it, one yellow and one white corn. I use pinto beans instead of kidney beans, I only use the can of Rotel and not the can of diced tomatoes. I don’t use the garlic salt or salt. With all the can ingredients I don’t drain any of them, it helps having the extra liquid and gives the soup more flavor. When I got the recipe many years ago from a co-worker she used pinto beans and kidney beans, and instead of the white corn she put in hominy. I really don’t care for kidney beans or hominy so that is why I switched it up with the black beans and white corn. There are many possibilities of changing this wonderful soup to your taste, it’s just so versatile.

Hi Alyssa ~ I haven’t personally tried freezing this one, but here’s what one reader who made it said: “It was great! I dumped all the ingredients into a gallon freezer bag, then thawed it the night before I put it in the crockpot. I turned the crockpot on low and when I got home 10 hours later it was ready!” Hope that helps!

Question for you – I love crock pot recipes because I can set them, go to work and come home to a ready made meal. However, most of your recipes call for intervention after 3 hours and I am gone much longer than that. Do you know if these recipes will work if you put in all of the ingredients on low for 8 hours?? 🙂 thanks!

Hi Robbin ~ if cooking on LOW, you can typically just double the cook time that a recipe calls for when cooked on HIGH. So if it cooks for 4 hours on HIGH, you’ll often be able to cook for 8 hours on LOW. Every Crock Pot cooks somewhat differently, so you’ll just want to keep an eye on them at the end.
