It’s SO easy, and this hearty One Pot Soup will hit the spot every time!
Go grab a large pot or dutch oven, and let’s get started!
Here’s what you’ll do…

Potato Soup Ingredients
You’ll just need the following ingredients to make your dreamy, creamy potato soup…
- Russet Potatoes – check out this trick for How to Store Potatoes Longer
- Butter – no oil here… we all know butter makes everything better!
- All Purpose Flour
- Milk – opt for Whole Milk or the richest, creamiest flavor
- Bacon – cooked until crispy… see How to Make Perfect Bacon
- Shredded Cheddar Cheese – freshly shredded makes ALL the difference
- Sour Cream
- Salt – I like to use Sea Salt
- Black Pepper – either ground or fresh cracked will both work
- Green Onions – see How to Grow Green Onions Inside
You’ll also need an 6 – 8 quart stockpot or 5 – 6 quart dutch oven to get the job done.

How to Make Potato Soup
You won’t believe how easy it is to make the best creamy loaded potato soup at home!
Here’s what you’ll do…
First you’ll want to bake, peel and cube your potatoes. If you plan ahead you can bake potatoes in the crockpot, bake potatoes in the Instant Pot, or just microwave, let them cool, then peel and cube.
Grab your pot and let’s get started!
Melt your butter in your dutch oven or stock pot over low heat on the stove.
Then whisk in your flour until smooth and bubbly. Continue cooking for 2 – 3 more minutes.
Now increase your heat to medium, and gradually stir in your milk.
Cook until the mixture has slightly thickened… about 15 minutes or so.
Now add your potatoes, and stir occasionally until the soup begins to bubble.
Reduce your heat to low, and simmer gently for 10 minutes.
Add crumbled bacon, shredded cheddar, sour cream, salt, and pepper, and stir until the cheese has melted.
Serve hot, topped with sliced green onions, and a little more bacon and cheese if you’d like. Because seriously… you can never have too much bacon and cheese, right?

Tips for the Best Loaded Potato Soup
Cook your bacon ahead of time so it’s ready to go.
I like to use this trick for Cooking Bacon in the Oven to make perfectly crispy pieces, without the mess!
Also, make sure to cube your potatoes into uniform sizes so they cook evenly.
I like to aim for 1/2″ to 3/4″ cubes.
Opt for Whole Milk for the richest, creamiest flavor.

Potato Soup Recipe
Ingredients
- 1/2 cup Butter
- ½ cup All Purpose Flour
- 8 cups Whole Milk
- 4 large Russet Potatoes - baked, peeled & cubed (I microwave mine, let them cool, then peel and cube.)
- 16 oz. Bacon Cooked and Crumbled
- 2 cups Shredded Cheddar Cheese
- 1 cup Sour Cream
- ¾ tsp. Salt
- ½ tsp. Black Pepper
- 3 Green Onions (sliced)
Instructions
- Melt butter in dutch oven or stock pot over Low heat.
- Whisk in flour until smooth and bubbly, then cook mixture for 2 – 3 minutes.
- Increase heat to Medium, and gradually stir in milk.
- Cook until slightly thickened, about 15 minutes.
- Add potatoes, stirring occasionally until soup begins to bubble.
- Reduce heat and simmer gently for 10 minutes.
- Add Crumbled Bacon, Shredded Cheddar, Sour Cream, Salt and Pepper, and stir until cheese is melted.
- Serve hot, topped with sliced Green Onions and ENJOY!!
