- Rotel – Diced Tomatoes + Green Chilies.
- Ranch Seasoning Mix – use a packet or this homemade Hidden Valley Buttermilk Ranch Recipe.
- Taco Seasoning Mix – use a packet or Homemade Taco Seasoning.
- Onion Powder – to crank up the flavor.
- Salt – I like to use Sea Salt.

Easy Crockpot Taco Soup

Ingredients
- 1 lb. Ground Beef, (browned and drained)
- 14.5 oz. Beef Broth, (1 can)
- 16 oz. Kidney Beans, (1 can, rinsed and drained)
- 15 oz. Black Beans, (1 can, rinsed and drained)
- 14.5 oz. Petite Diced Tomatoes, (1 can + liquid from can)
- 15 oz. Corn, (1 can + liquid from can)
- 10 oz. Rotel, (1 can Original Rotel)
- 1 oz. Ranch Seasoning Mix, (Hidden Valley Ranch Seasoning Mix packet or 3 tbsp. Ranch Dressing Mix)
- 1 oz. Taco Seasoning, (Taco Seasoning Mix Packet or 3 tbsp. homemade Taco Seasoning)
- 1.5 tsp. Onion Powder
- ½ tsp. Sea Salt
Instructions
- Gather your ingredients.

- Add all ingredients (except garnish ingredients) to Crockpot and stir well.

- Cook on HIGH for 2 hours, or LOW for 4 hours.
- Top with a dollop of Sour Cream, Shredded Cheddar, Chopped Green Onions, and some Fritos for a delicious added punch of flavor! ENJOY!!

This is hands down the greatest soup I’ve made in a long time. Different from what I’m used to. I am in heaven. It is just so tasty. I didn’t think using just one can of everything would make enough soup, but I used one can of everything, and it made plenty of soup. I topped it with the Fritos and the sour cream and the onion because I had no scallion. It is simply amazing. Thank you!!

For the taco soup recipe can I cook the meat in the crockpot with the other ingredients and not have to brown it first? Would it taste the same?
I wouldn’t do this simply because of the grease in the meat!
To make things easy for recipes like this, I buy my hamburger meat in bulk at sams club and cook and freeze it in one pound bags as soon as I get home. So it makes taco, soup, and sloppy Joe nights a breeze!
You’ll definitely want to brown the meat first and then drain it prior to making the soup.

Question for you – I love crock pot recipes because I can set them, go to work and come home to a ready made meal. However, most of your recipes call for intervention after 3 hours and I am gone much longer than that. Do you know if these recipes will work if you put in all of the ingredients on low for 8 hours?? 🙂 thanks!
Hi Robbin ~ if cooking on LOW, you can typically just double the cook time that a recipe calls for when cooked on HIGH. So if it cooks for 4 hours on HIGH, you’ll often be able to cook for 8 hours on LOW. Every Crock Pot cooks somewhat differently, so you’ll just want to keep an eye on them at the end. Hope that helps! 🙂
