Then, after your chicken has been marinated and grilled to perfection, you build your sandwich by decking it out with crispy bacon and perfectly ripened slices of avocados.

If you want to take it one step further, you can even transform your sandwich into a copycat Red Robin chicken sandwich. All you’ll need to add is a slice of tomato and a slice of provolone cheese. That’s it!

For your ranch marinade chicken you’ll need these ingredients…

  • Boneless Skinless Chicken Breasts – Thin sliced or flattened. If you need to flatten your chicken, don’t miss my instructions for flattening chicken in the recipe card below.
  • Hidden Valley Ranch Mix – Use store bought packets or make your own fabulous Copycat Hidden Valley Ranch.
  • Avocado Oil
  • Red Wine Vinegar

How To Make a California Chicken Sandwich

You’re not going to believe how EASY it is to make a California chicken sandwich using my ranch chicken marinade.

First you’ll need to grab a bowl, whisk, ingredients, and a gallon sized freezer bag.

Then do this…

1. Combine all your marinade ingredients in mixing bowl and whisk until well everything is well combined.

2. Pour the mixture into a gallon size Freezer Bag.

3. Add the thin sliced or flattened Chicken to the Freezer Bag, and transfer to refrigerator to marinate.

4. Flip your bag multiple times as your chicken marinates.

5. You can grill your pre-marinated chicken on the grill outside or on a grill pan inside as instructed in the recipe card below.

6. Then top off with the California Chicken Sandwich toppings and a delicious burger bun, and ENJOY!

Ingredients 

Easy Ranch Marinade

  • 4 Boneless Skinless Chicken Breasts, thin cut or flattened
  • 2 oz. Hidden Valley Ranch Salad Dressing Mix , two 1 oz. packets OR 6 Tbsp Copycat Hidden Valley Ranch
  • 1/2 cup Avocado Oi, or Canola Oil
  • 1/4 cup Red Wine Vinegar

Grilled Chicken Sandwich

  • 4 Hamburger Buns, OR use this Soft Hamburger Buns Recipe
  • 8 slices Bacon, cooked using my Oven Bacon Recipe to achieve perfect crispy bacon
  • 2 Avocados, sliced
  • 4 pieces Leaf Lettuce
  • 2 Tbsp. Ranch Dressing, use your favorite ranch dressing

Instructions 

  • Gather your ranch chicken marinade ingredients.

  • In small mixing bowl, combine Red Wine Vinegar, Oil and Ranch Powder Mix, and stir well.
  • Add mixture and chicken to Freezer Ziploc Bag.

  • Place in the refrigerator to marinate for several hours or overnight, turning and flipping several times.
  • When ready for dinner, remove the chicken from the bag, toss the marinade out, and get ready to grill!
  • Grill your pre-marinated chicken on the grill outside (8 minutes on each side at 400 degrees or until internal temperature of your chicken is 165 degrees), or on a grill pan inside.
  • Build your California chicken sandwich… bun, grilled chicken, fresh avocado slices, bacon, ranch dressing and lettuce, and ENJOY!!

Notes

How To Flatten Chicken Breast: To flatten your chicken breast to an even thickness, simply place the chicken breast between two large pieces of plastic wrap.  Then using the flat side of a meat mallet or tenderizer, gently pound your chicken breast flat, starting in the middle.
Freezer Tip: If you’re not ready to cook the chicken yet… after adding the chicken and marinade to the bag, place directly in the freezer for some pre-marinated chicken later!  Just pull out of the freezer, and thaw in the fridge to allow all of the yummy flavors soak into the chicken prior to cooking.
