How to Store Leftovers

One of my favorite Easy Meal Prep Ideas is to make this casserole on the weekend, then enjoy the leftovers over the next few days for lunch or dinner.

Leftovers of this tasty taco and rice casserole can be stored in an airtight container in the refrigerator for up to 3 days. You can also store it for up to 1 month in the freezer.

How To Reheat Leftovers

When you’re ready to enjoy your Mexican chicken rice casserole leftovers, simply transfer individual servings to a microwave safe dish, cover with paper towels, and reheat for 30 seconds at a time (stirring each time) until hot.

You can even add a little extra cheese on top for the last few seconds of microwaving. The more cheese the merrier, right?
