Ingredients
2cupsBrowned Ground Beef or Cubed Cooked Chicken(cubed Rotisserie Chicken can be substituted)
2cupsCooked White Rice
16oz.Refried Beans
1/2cupSour Cream
14.5oz.Diced Tomatoes
4oz.Diced Green Chiles
1cupFrozen Chopped White Onions(completely thawed)
2cupsTortilla Strips(Fritos or Nacho Cheese Doritos broken into 1/2 inch sized pieces can be substituted)
Instructions
Gather your taco casserole recipe ingredients.
Preheat oven to 350 degrees.
Spray 9×13 casserole dish with Nonstick Cooking spray.
Combine Rice, Beans, Sour Cream, Tomatoes, Green Chiles, Onions, Taco Seasoning and 1 cup of Shredded Cheese in large bowl, and stir well.
Add cubed Chicken to mixture and continue stirring until well combined.
Transfer mixture into casserole dish, cover with foil, and bake for 30 minutes.
After 30 minutes, remove foil, sprinkle with remaining 1 cup of Shredded Cheese, and evenly top with Tortilla Strips. Then bake UNCOVERED for 10 more minutes, or until cheese has melted.
Serve with a side of Chips and Guacamole or Salsa and ENJOY!
