Ingredients
2cupsdiced Cooked Chicken(cooked turkey or rotisserie chicken can be substituted)
2cupscooked White Rice
12oz.pkg. Frozen Mixed Vegetables, thawed(other frozen veggies can be substituted)
2cupsshredded Cheddar Cheese
21ozCampbell's Cream of Chicken Soup(2 cans, 10.5 oz. each)
1/2cupSour Cream
1/2cupMayonnaise
2tbspmelted Butter
1/2tspOnion Powder
1/2tspGarlic Powder
1/4tspSalt
1/8tspPepper
Instructions
Gather your ingredients.
Preheat your oven to 350 degrees.
Spray 9x13 casserole dish with cooking spray.
Place thawed Mixed Vegetables in the bottom of the casserole dish.
Top with cooked cubed Chicken, then add cooked Rice.
In a mixing bowl, combine Soup, Sour Cream, Mayonnaise, Onion Powder Garlic Powder, Salt and Pepper, and mix well.
Spread mixture evenly over the ingredients already in the casserole dish.
Drizzle with melted butter, and cover with aluminum foil.
Bake at 350 degrees for 30 minutes.
After baking for 30 minutes, remove your foil.
Top with Shredded Cheese.
Continue baking UNCOVERED for approximately 10-15 minutes, or until the cheese has melted.
Notes
Chicken Casserole Variations and Substitutions:
Cooked Chicken: You can also used cooked turkey... and rotisserie chicken works great, too!
Rice: You can use white rice, brown rice or any other favorite pre-cooked rice. I personally love to use long grain rice.
Mixed Vegetables: You can also use a bag of frozen peas, frozen beans, or any other favorite frozen vegetables.
Cheddar Cheese: Upgrade your flavors when you use sharp cheddar or white cheddar cheese.
Cream of Chicken Soup: An easy way to change up the flavors is to use cream of chicken soup with herbs, cream of mushroom soup or even cream of potato soup.
How to Store Leftovers: Place chicken casserole leftovers in an airtight container. Then, store it in your refrigerator for up to 3 days or the freezer for up to 1 month.How to Reheat: To reheat, simply transfer a portion to a microwave safe dish. Then cover it with paper towels, and reheat for 30 seconds at a time (stirring each time) until hot. Make your casserole even better when you add some extra cheese on top for the last few seconds of microwaving!
