Foil Packet Fish and Vegetables Recipe
Loaded with fresh peppers and tomatoes, this Foil Packet Fish and Vegetables Recipe is both satisfying and delicious.
The real secret to this recipe is the foil. Baking your favorite fish in foil helps to contain all of that amazing fresh flavor. Then after dinner, your cleanup is a breeze!
Here’s what you’ll need to get this tasty Seafood Dinner Recipe oven ready…
Foil Packet Fish and Vegetables Recipe
Ingredients
- 4 White Fish Fillets {4 – 6 oz. each} {like Cod, Tilapia, or Halibut}
- 14.5 ounces can Fire Roasted Tomatoes drained
- 2 tablespoons Chopped Onion
- 1 tablespoon Finely Chopped Fresh Ginger {1 tsp. Ground Ginger can be substituted}
- 1 teaspoon Minced Garlic
- 1 teaspoon Jalapeno Peppers finely chopped
- Salt and Pepper to taste
Instructions
- Preheat oven 500°F. Tear off four sheets of aluminum foil to hold fish.
- Combine Tomatoes, Onion, Ginger, Garlic, and Jalapeno in small bowl. Stir well and set aside.
- Season fish to taste with Salt and Pepper.
- Then place 1 fish fillet on each piece of foil. Top each fillet with a heaping 1/4 cup of tomato mixture. Seal packets tightly, folding the edges over and place all of them on one baking sheet.
- Bake 12 minutes or until fish is cooked through. Serve in foil pouch and enjoy!
