  • Black Beans & Kidney  Beans – or you could use 2 cans of black beans.
  • Petite Diced Tomatoes – no need to drain.
  • Canned Corn – no need to drain.
  • Rotel – Diced Tomatoes + Green Chilies.
  • Ranch Seasoning Mix – use a packet or this homemade Hidden Valley Buttermilk Ranch Recipe.
  • Taco Seasoning Mix – use a packet or Homemade Taco Seasoning.
  • Onion Powder – to crank up the flavor.
  • Salt – I like to use Sea Salt.

Ingredients 

  • 1 lb. Ground Beef, (browned and drained)
  • 14.5 oz. Beef Broth, (1 can)
  • 16 oz. Kidney Beans, (1 can, rinsed and drained)
  • 15 oz. Black Beans, (1 can, rinsed and drained)
  • 14.5 oz. Petite Diced Tomatoes, (1 can + liquid from can)
  • 15 oz. Corn, (1 can + liquid from can)
  • 10 oz. Rotel, (1 can Original Rotel)
  • 1 oz. Ranch Seasoning Mix, (Hidden Valley Ranch Seasoning Mix packet or 3 tbsp. Ranch Dressing Mix)
  • 1 oz. Taco Seasoning, (Taco Seasoning Mix Packet or 3 tbsp. homemade Taco Seasoning)
  • 1.5 tsp. Onion Powder
  • ½ tsp. Sea Salt

Instructions 

  • Gather your ingredients.
    Ingredients including beef broth, kidney beans, and onion powder.
  • Add all ingredients (except garnish ingredients) to Crockpot and stir well.

  • Cook on HIGH for 2 hours, or LOW for 4 hours.
  • Top with a dollop of Sour Cream, Shredded Cheddar, Chopped Green Onions, and some Fritos for a delicious added punch of flavor! ENJOY!!

  • Freezing Instructions: If you’d like to freeze the soup for later, allow it to cool off after you have cooked it. Then transfer soup to Ziploc Freezer bags, and lay flat in the freezer to save space.

    Can I cook this on low for 8 hours while I’m at work?

      You can, but I don’t recommend it. The end result may be overcooked and not as appetizing as you would like. For best results, I do recommend sticking with the cooking instructions provided. One alternative you could consider is using a programmable Crock Pot or cooking on your day off work, then reheating then leftovers. This taco soup also freezes beautifully for meal prep.

    I made this today and my husband said it was the best soup I’ve ever made! We don’t like spicy things so I only put one tsp of taco seasoning and one tsp of Ranch dressing mix and it was perfect for us.     How much does it make from the recipe as listed? Will it fill a 6 quart crockpot?

      Hi Tom ~ I use a 5.5 quart crockpot when making this, and it usually fills it about 2/3 full. Hope that helps!

    I tried this recipe away from home and don’t have a crockpot to cook it. Is there a way to cook it in a regular pot on the stove?

      I usually just heat it through on the stove top if I don’t have a lot of slowcooker time. I think another post said 25-35 minutes. Since the meat is cooked before adding, it should be fine.

    I got this recipe from a southern friend.she along with the ingredients puts in pepperoni diced and lil smokies sausages also diced ! I put in kidney beans and garbanzo beans. This time I started the recipe off using what was left of yesterday’s spaghetti sauce
