I fell in love with the Cafe Rio sweet pork a few years ago. That’s what inspired this copycat pulled pork tacos recipe.
These tacos have been on repeat at my home ever since.
There’s just one problem I run into when making these slow cooker pork tacos.
No leftovers!
My guys literally devour these pulled pork tacos… each and every time I make them. Just like when I make these Chicken Tacos with Shredded Chicken, savory Crockpot Ground Beef Taco Meat, and tender Green Chile Burritos!
I don’t mind though. These simple pork tacos are so easy to make with just 10 minutes of prep. Plus, all you’ll need are 8 magical ingredients.

Here’s what you need to add to your next grocery shopping list…
- Pork Loin or Pork Tenderloin – Fresh or thawed.
- Coca Cola – To add delicious sweetness and to keep your pork perfectly tender.
- Mild Red Enchilada Sauce
- Mild Diced Green Chiles
- Brown Sugar – To add a little more sweetness to your sweet pork tacos.
- Garlic Salt
- Mustard Powder
- Cayenne Pepper – You can modify this based on how spicy you like your meat.
Like so many of my Easy Crockpot Recipes, you’ll also need a 5 – 6 quart Crock Pot to prepare pulled pork tacos recipe.

How to Make Pulled Pork Tacos
You won’t believe how EASY it is to make the best shredded pork tacos at home!
Here’s what you’ll do…
1. Cut your pork loin in half, trimming off any excess fat.
2. Add the pork to a gallon freezer bag with the marinade ingredients, and allow it to marinade for at least two hours (overnight is preferred).
3 Cook the pork loin in your crockpot, then remove the pork and drain & discard the juices.
4. Shred your pork using one of these 4 easy tricks for How To Shred Pork fast, then place it back in the slow cooker.

5. Mix your sauce ingredients in a medium mixing bowl, then pour the sauce over the pork and combine thoroughly.
6. Continue cooking until done.
Once done, build your pulled pork tacos and enjoy every last tantalizing bite!

I like to reserve some leftover sauce from the crockpot that it cooked in, drizzle it over the top, and store in an airtight container in the refrigerator for up to 3 days.
How to Reheat

Pulled Pork Tacos

Ingredients
- 3 pounds Pork Loin, or Pork Tenderloin
- 2 1/2 cups Coca Cola, (20 oz. total)
- 10 ounces Mild Red Enchilada Sauce
- 4 ounces Mild Diced Green Chiles
- 1 cup Brown Sugar, (packed)
- 1 1/2 teaspoons Garlic Salt
- 1/2 teaspoon Mustard Powder
- 1/4 teaspoon Cayenne Pepper
Instructions
- Gather your ingredients.

- Cut pork in half across width, trimming off any excess fat.
- Place pork in gallon ziploc bag with 1 1/2 cups of Coca Cola and 1/2 cup of Brown Sugar.
- Allow pork to marinate for at least 2 hours, or preferably overnight.
- When ready to cook, place both pork and marinade in a 5 – 6 quart crockpot and cook on LOW for 6 – 7 hours, or until done.
- Remove pork from crockpot, and shred meat on cutting board using 2 forks.

- Discard juices from crockpot and add shredded pork back to crockpot.
- In a medium bowl, stir together remaining 1 cup of Coca Cola, Enchilada Sauce, Green Chiles, remaining 1/2 cup of Brown Sugar, Garlic Salt, Mustard Powder, and Cayenne Pepper.
- Add sauce mixture to crockpot, stirring thoroughly with shredded pork, and cover crockpot. Cook on HIGH for 30 more minutes, or until done.

- Once done, you can build your pulled pork tacos or burritos and ENJOY!
