This Chicken Instant Pot Tortilla Soup Recipe will infuse big flavors into your dinner this week!  Not only is it filled with healthy ingredients, but it’s also crazy easy to make thanks to a Rotisserie Chicken and canned veggies.  How simple is that?!?

That’s right… you’ll end up with none of the effort, and all of the yum factor with this easy chicken taco soup!

It’s actually so easy that all you’ll do is throw your tasty ingredients into the Instant Pot and walk away!  It really doesn’t get much simpler than that!!  Plus… it’s ridiculously delish!  The whole family will LOVE this tasty dinner!

So are you ready for another Easy Instant Pot Recipe?  Move over Taco Tuesday, it’s time to change it up and pack big time flavor into your dinner… fast and easy style with some Instant Pot Chicken Tortilla Soup!

Instant Pot Tortilla Soup Recipe!

This Chicken Instant Pot Tortilla Soup Recipe will infuse big flavors into your dinner this week!

Ingredients

  • 2 cups shredded Rotisserie Chicken
  • 14.5 ounces Chicken Broth
  • 1 can Kidney Beans drained {16 ounces}
  • 1 can Black Beans drained and rinsed {15 ounces}
  • 15 ounces Corn drained {1 can}
  • 1 can Petite Diced Tomatoes + liquid from can {14.5 ounces}
  • 1 can Original Rotel - Diced Tomatoes and Green Chilies {10 ounces}
  • Hidden Valley Ranch Seasoning Mix Packet {1 ounce packet or 3 tablespoons copycat Buttermilk Ranch Dressing Mix Recipe}
  • Chicken Fajita Seasoning Mix {1 ounce packet or 3 tablespoons Homemade Fajita Seasoning Recipe}
  • 1.5 teaspoon Onion Powder
  • 1 teaspoon Garlic Salt
  • For Garnish: Sour Cream Shredded Cheddar chopped Green Onions, and Tortilla Strips!

Instructions

  • In a small bowl, combine Ranch Seasoning, Fajita Seasoning, Onion Powder and Garlic Salt.
  • Add Chicken Broth, Chicken, Kidney Beans, Black Beans, Corn and Seasonings from small bowl to Instant Pot, and combine thoroughly.
  • Then, to avoid touching the sides of Instant Pot, add to the center of mixture the Tomatoes and Rotel.
  • Place lid on pot and select Pressure Cook, High Pressure and change cook time to 8 minutes.
  • Preheat will begin 10 seconds after settings have been selected.
  • Once cook time has completed, quick release pressure before removing lid.
  • Allow soup to cool for 5 minutes, then stir before serving into bowls.
  • Top with Sour Cream, Shredded Cheddar, Chopped Green Onions and Tortilla Strips to send the flavor over the top!

Notes

It will take approx. 15 minutes for Instant Pot to reach pressure before your selected cook time begins. This is in addition to the 8 minute cook time you have selected.
If using a Crock Pot Pressure Cooker, select the "Beans/Chili" setting to manually override cook time and pressure settings.

    What if I want to use raw chicken breasts? Will that change the cook time?

      Hi Kim ~ this recipe works best with pre-cooked chicken, so if you don’t have rotisserie chicken on hand you could just pre-bake some chicken breasts and/or thighs in the oven or saute in your instant pot, shred, and then use in the recipe. Hope that helps! 🙂

    Question, in the pic there are two cans of chicken broth. But I only see one 14.5oz can being used? Can someone clarify what they used, please?? Thanks!
