You’ll just need a few simple ingredients to make the Best instant pot bbq chicken thighs…

  • Chicken Thighs – I like to use chicken thighs for this recipe, as they are extra tender and juicy.
  • Barbecue Sauce – I used Sweet Baby Rays for the sweet and tangy flavors.
  • Coca-Cola – Coke adds the perfect touch of sweet and nostalgia to your chicken dinners!
  • Optional: Burger Slider Buns or Homemade Burger Buns to give your chicken a massive flavor upgrade!

Like most of my easy Dump and Go Instant Pot Recipes, you’ll also need an Instant Pot 6 quart Pressure Cooker to prepare this instant pot pulled bbq chicken.

How To Make Instant Pot Pulled BBQ Chicken

You won’t believe how EASY it is to make these fabulous instant pot barbecue chicken thighs!

Here’s what you’ll do…

1. Add half your Coke to the instant Pot.

2. Then mix up the remaining Coke with BBQ Sauce.

3. Add chicken to Instant Pot and pour sauce over chicken.

4. Set your Instant Pot to cook per the instructions in the recipe card below.

5. Don’t miss my tip for what to do before removing the lid!

6. When done, remove the chicken and serve right away.

Ingredients 

  • 3 pounds Boneless Skinless Chicken Thighs, fresh or thawed
  • 18 ounces Sweet Baby Ray's Barbecue Sauce (1 bottle)
  • 3/4 cup Coca Cola (6 ounces)
  • 1/4 cup Coca Cola (2 ounces)

Instructions 

  • Gather your ingredients.
    Bottles of Coke and barbecue sauce.
  • Add 1/4 cup Coca Cola to bottom of Instant Pot, then place Chicken Thighs in the Instant Pot.

  • In medium mixing bowl, combine 3/4 cup Coca Cola with 18 ounces of Barbecue Sauce.
  • Set 3/4 cup of this sauce mixture aside to drizzle on your cooked chicken once it’s done.
  • Pour remaining sauce mixture from bowl over Chicken Thighs and secure lid on Instant Pot.
  • Select “Meat/Stew” setting, select “High Pressure,” and change cooking time to 15 minutes.
  • Preheat will start 10 seconds after settings are selected.
  • Once Chicken is done, Quick Release pressure before removing lid.
  • Serve as whole thighs, or shred with 2 forks and serve on a bun as a sandwich or sliders.
  • Drizzle the 3/4 cup of sauce you had set aside over chicken on your plate or bun, and ENJOY!

  • Additional Time to Build Pressure: In addition to cook time, it will take approx. 15 minutes to initially reach pressure before cook time begins.
  • Crock Pot Pressure Cooker Instructions: If using a Crock Pot Pressure Cooker, select the “Beans/Chili” setting to manually override cook time and pressure settings.
