Why Is My Instant Pot Chicken Rubbery?

Your chicken is most likely rubbery if it is not completely cooked. To avoid rubbery chicken, simply follow my instructions for this recipe below!

How Long Does It Take To Cook Chicken In The Instant Pot?

For this instant pot chicken with italian dressing that I am sharing with you today, you’ll need to cook your chicken for a full 15 minutes to ensure it is fully cooked.

This cook time is in addition to the time required for the instant pot to reach pressure before cooking begins.

How Much Water Do You Put In A Pressure Cooker For Chicken?

A pressure cooker does require a certain amount of liquid to work correctly. However, water by itself can make your chicken bland and tasteless.

So for this instant pot italian dressing chicken, I’ve skipped the water and used an entire bottle of Italian Dressing instead. The rich Italian Dressing infuses your chicken with amazing flavor the whole time it’s cooking in your pressure cooker.

You’ll need just 2 simple ingredients to make the BEST instant pot italian chicken thighs ever!

  • Boneless Skinless Chicken Thighs – I like to use chicken thighs for this recipe, as they are extra tender and juicy.
  • Italian Salad Dressing – Your favorite brand.

Like most of my easy High Protein Instant Pot Recipes, you’ll also need an Instant Pot 6 quart Pressure Cooker to get the job done.

    5 stars
Im excited to try this recipe. I’m new to the Instapot and this is my first meal cooking in it. Question is – does the length of time go up the more chicken you cook? Thank you Michelle

    1. Heidi Miller says:

Hi Michelle, no the cook time would not change as long as you use small to medium sized chicken thighs.
However, the time it takes for the Instant Pot to reach pressure would increase. The more that you put in the pot, the longer it takes to build up and reach pressure.
The cook time is impacted by the size of meat you are cooking. So if you chose to use super large chicken thighs, or even chicken breasts, you would need to increase the cook time accordingly.

I hope this helps ~ Heidi

  2. Felicia Weber says:

    Can I use chicken breast?

      1. Elise says:

Will I have to cut my chickens in cubes.? I expected to shred it after ..??

        1. Heidi says:

Hi Elise ~ If using chicken breasts, you’ll want to cut into cubes first. If using thighs, you can cook whole and then shred when it’s done. Hope that helps!

  3. Grace says:

I always made this in the oven and would marinate overnight but it was never as flavorful as this. I just got my instant pot for Christmas and this is definitely one of my favorites I been unsure about how much moisture needed to cook things so I have been trying all sorts of recipes

    1. Heidi says:

Thanks so much for the feedback, Grace… I’m so glad to hear this recipe has become one of your favorites! 🙂

  4. Faith says:

If i use stir fry chicken breasts thin cut how long should i cook in instant pot. That is chicken i have in fridge.

      1. Faith says:

That does my pieces are are 1/2 inch wide and four to five inches long. There are 14 of them. Think still use the other recipe at 6 minutes?

  5. Chase says:

This was delicious. Thanks! How can you keep the vent from spewing chicken juice everywhere when you release the pressure? It gets the whole lid covered

    1. Heidi says:

Hi Chase ~ so glad you liked it! Venting can get messy, so I like to do what I call a ‘graduated’ pressure release. I just tap gently to release the pressure, and then a few seconds later tap gently again, and continue the process until all of the pressure has been released. Sometimes I cover it up with a little rag to catch the splatters, too. Hope that helps!

  6. Jen says:

Thank you for these super easy recipes! I purchased my first instant pot this evening. I thought I’d start with Italian chicken. It was super easy!!! And tasty too! I also got the stuff for goulash too! That’s my next adventure. I hope it’s as good as the first round!!
I love the ease of the recipes! It makes using a new ‘toy’ less daunting! Thank you thank you!
