You’ll just need a few simple ingredients to make your Carrot Cake Mix Cookies!
Here’s what you’ll need to get on your next trip to the grocery store…
- Carrot Cake Mix – the shortcut base to these delicious, chewy cookies
- Butter – vegetable oil or canola oil can be substituted
- Eggs – you’ll need large eggs for this recipe
- Cream Cheese Frosting – store bought or Homemade Cream Cheese Frosting!
When it comes to Carrot Cake Mix Cookies, salted or unsalted butter can be used, as the cake mix will have a little salt in it. However, I’ve found that salted butter will result in superior flavor.

How to Make Carrot Cake Cookies
You won’t believe how EASY it is to make these carrot cake mix cookies at home!
Here’s what you’ll do…
1. Mix your Cake Mix, Butter & Eggs with stand mixer or hand mixer until well combined.
2. Cover your dough, and chill in the fridge for 2 hours.
3. After dough has chilled, line baking sheets with parchment paper.
4. Then roll your cookie dough into balls and place on cookie sheet.
5. Bake in the oven, then cool on wire racks.
6. Once completely cooled, frost with cream cheese frosting.
That’s it… you’re done!

Here are some tasty mix ins you can add to your cookie dough before baking…
- Carrots: Stir 1/2 cup grated carrots (tiny pieces) into dough after mixing
- Cinnamon: Add an additional 1/2 teaspoon cinnamon into the cake mix before mixing
- Nuts: Fold 1/2 cup chopped Pecans or Walnuts into dough after mixing
- Cookie Sandwiches: Take 2 cookies and add extra frosting in between to create carrot cake cookie sandwiches!

What to Top Carrot Cake Cookies With
Once you’ve frosted your cookies, you can either leave as is, or add a little something on top.
Here are a few of my favorite topper ideas to add on top of the frosting before it dries…
- Carrot Shaped Candies or Cupcake Toppers (I found these marshmallow carrot cupcake toppers on the Easter aisle at Walmart)
- Chopped Pecans or Walnuts
- Coconut Flakes (shredded sweetened coconut)
- Orange Sprinkles (or Orange Colored Sugar Sprinkles)
Make Ahead Tips
Carrot cake mix cookies are SO easy to prep ahead of time!
Your cookie dough can be made ahead of time, then stored covered in the refrigerator up to 2 days prior to baking your carrot cake cookies.

How to Store Carrot Cake Cookies
After your Carrot Cake Cookies have baked and completely cooled, plain cookies can be stored at room temperature, covered in an airtight container, for up to 3 days.
Or if you frost them with homemade cream cheese frosting, store covered in the refrigerator.

Carrot Cake Cookies
Ingredients
- 13.25 ounces Betty Crocker Carrot Cake Mix (If using 15.25 oz. Duncan Hines Carrot Cake Mix, increase the butter or oil to 1/2 cup)
- 1/3 cup Melted Butter (vegetable or canola oil can be substituted)
- 2 large Eggs
- 2 cups Cream Cheese Frosting
Instructions
- Combine Cake Mix, Melted Butter (or oil), and Eggs in large mixing bowl and mix with hand mixer or stand mixer until well combined.
- Cover dough and chill in refrigerator for 2 hours.
- After dough has chilled, preheat oven to 350 degrees.
- Line large baking sheets with parchment paper.
- Roll cookie dough into 1 1/2 tablespoon sized rounded balls and transfer to cookie sheet.
- Bake on center oven rack for 7 - 13 minutes, or until done. {Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets}
- Remove from oven and allow to cool on cookie sheets for 5 minutes.
- Transfer cookies to wire racks to finish cooling.
- Once completely cool, frost with cream cheese frosting.
- You can even add some fun sprinkles or candy carrots on top. (I used carrot shaped marshmallow cupcake toppers I found on the Easter aisle at Walmart). ENJOY!
