- Chicken Breasts – You can use fresh or thawed.
- Salsa – Use your favorite salsa or make up a fresh batch of this Easy Salsa Sauce Recipe.
- Cream Cheese – Use a high quality cream cheese for best flavor.
- Shredded Cheddar Cheese – Shredded cheese from a bag will work just fine.
Like so many of my easy Slow Cooker Dump Dinners, you’ll also need a 5 – 6 quart Crockpot to prepare your crockpot salsa chicken.

Like all of my easy Mexican Recipes, preparing this chicken in salsa crock pot wonder is crazy simple.
Here’s what you’ll do…
1. Cook your chicken in your crockpot, and then drain and discard the juices.

2. Pour the salsa sauce mixture over your chicken and continue cooking.
3. Just before your chicken is done, top with the cheddar cheese to allow it to melt.
4. Once your chicken is done and the cheese has melted, serve it up and enjoy every last delightful bite!

Salsa Chicken Recipe

Ingredients
- 3 pounds Boneless Skinless Chicken Breasts, fresh or thawed
- 16 ounces Salsa, or make my Easy Salsa Sauce Recipe
- 1 cup Shredded Cheddar Cheese
- 8 ounces Cream Cheese, (softened)
- 16 ounces Corn, 1 can, drained (optional add-in)
- 16 ounces Black Beans, 1 can, drained (optional add-in)
Instructions
- Gather your salsa chicken recipe ingredients.

- Cook chicken in Crockpot on HIGH for 3 hours or LOW for 6 hours. (covered)

- After 3 hours on HIGH or 6 hours on LOW, drain juices from Crockpot.
- In separate bowl, stir salsa and cream cheese. (and optional drained corn and/or drained black beans)
- Pour mixture in crockpot over chicken and cook for additional 30 minutes on HIGH, covered, or until done.
- For the last ten minutes, add in 1 cup shredded cheddar cheese to melt on top.
- Garnish with chopped Green Onions, and serve with Sour Cream, Guacamole and extra Salsa.

Can you use frozen chicken breasts? If so how long would you recommend cooking them for?
I’ve found this recipe works best with fresh or thawed chicken.
I’m nervous about cooking the chicken by itself in the crockpot… I’ll be at work all day so I would put it on low.. Has anyone tried cooking it in the salsa mix?

I was wondering the same thing… did you try cooking just the chicken in the crockpot? Let me know how it turned out or I might just go for it and have a back up dinner plan just in case.
You’ll just place the chicken in the crockpot by itself for the first step… nothing else is required, as the chicken will end up cooking in its own juices. 😉 By draining the juices and adding the sauce at the end, you’ll have a much richer, flavorful, and less watered down sauce. Hope that helps!

I really enjoyed this recipe. After cooking the chicken I shredded it before adding the corn, beans, salsa, and cream cheese for delicious tacos. We definitely have leftovers so we’ll see how the leftovers go.

When do you add in the beans and corn?
Hi Andie ~ if adding in the drained beans and drained corn, you can just put those in for the last 30 minutes when you add the salsa and cream cheese, after the juices from the chicken have been drained.
Question: Could you cook these recipes for longer than 3 hours?
Hi Megan ~ yes… you could cook the chicken on low for 6 – 7 hours, remove the juices, add the sauce, then cook an additional 30 minutes, or until done. Hope that helps! 😉
