You’ll just need the following ingredients to make this dreamy, creamy loaded baked potato soup recipe…

  • Russet Potatoes – Check out this trick for How to Make Potatoes Last Longer.
  • Butter – No oil here… we all know butter makes everything better!
  • All Purpose Flour
  • Milk – Opt for Whole Milk or the richest, creamiest flavor.
  • Bacon – Cooked until crispy… use this trick for Crispy Bacon in Oven.
  • Shredded Cheddar Cheese – Freshly shredded makes ALL the difference!
  • Sour Cream – The higher the quality the better!
  • Salt – I like to use Sea Salt.
  • Black Pepper – Use freshly ground pepper for better flavor.
  • Green Onions

Like so many of my large Family One Pot Meals, you’ll also need an 6 – 8 quart stockpot or 5 – 6 quart dutch oven to get the job done.

How to Make Loaded Potato Soup

So just how do you make baked potato soup?

Just follow these simple steps to make the best loaded potato soup right on your stovetop…

1. First you’ll want to bake, peel and cube your potatoes. If you plan ahead you can prepare bake potatoes in crockpot with foil, make this Instant Pot baked potatoes recipe, or simply microwave your potatoes, let them cool, then peel and cube.

2. Grab your pot and let’s get started!

3. Melt your butter in your dutch oven or stock pot over low heat on the stove.

4. Then whisk in your flour until smooth and bubbly.  Continue cooking for 2 – 3 more minutes.

5. Now increase your heat to medium, and gradually stir in your milk.

6. Cook until the mixture has slightly thickened – (see the recipe card below for details)

7. Now add your potatoes, and stir occasionally.

8. Continue cooking as directed.

9. Then add the crumbled bacon, shredded cheddar, sour cream, salt, and pepper, and stir until the cheese has melted.

Serve hot, topped with sliced green onions, and a little more bacon and cheese if you’d like. Because seriously… you can never have too much bacon and cheese, right?

Ingredients 

  • 1/2 cup Butter
  • ½ cup All Purpose Flour
  • 8 cups Whole Milk
  • 4 large Russet Potatoes – baked, peeled & cubed, (I microwave mine, let them cool, then peel and cube.)
  • 16 oz. Bacon Cooked and Crumbled
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • ¾ tsp. Salt
  • ½ tsp. Black Pepper
  • 3 Green Onions, (sliced)

Instructions 

  • Gather your ingredients.

  • Whisk in flour until smooth and bubbly, then cook mixture for 2 – 3 minutes.
  • Increase heat to Medium, and gradually stir in milk.

  • Add potatoes, stirring occasionally until soup begins to bubble.
  • Reduce heat and simmer gently for 10 minutes.
  • Add Crumbled Bacon, Shredded Cheddar, Sour Cream, Salt and Pepper, and stir until cheese is melted.
  • Serve hot, topped with sliced Green Onions and ENJOY!!
