Are you ready to meet your new favorite sweet treat?

Not only are these cheesecake stuffed strawberries love at first sight… they’re also love at first bite!

You see, last year we went to a fabulous Summer party hosted by our sweet friends.

There were loads of festivities, crazy shenanigans, and some magnificent food!  And guess what?  One of the highlights of the day was the Cheesecake Stuffed Strawberries.

Um… YUM!

Now I love all things strawberry, but this was my first introduction to bite size cream cheese filled fresh strawberries.

And let me tell you… it was outrageous berry bliss with every bite!

So of course I asked for the recipe, and couldn’t believe how simple these are to make!

Did I mention they’re just 4 ingredients?

SO easy, right?

Now I’ve only got one warning for you:  You won’t be able to eat just one!

Don’t ask me how I know. 🙂  I may or may not have hovered near the strawberry tray all night long.

These cheesecake strawberries really are the perfect party treat and they’re so versatile too.  You can make them for your Summer Parties, Birthday Parties, Bridal Showers, Weddings, Baby Showers, or summer back yard bashes.

You can even turn them into Strawberry Santas at Christmas time for a festive holiday party treat.

This superb strawberry treat will be a hit, I promise!

How to Hull Strawberries in Seconds

So how do you hollow out a strawberry? Well, hollowing out a strawberry is so much easier than you think!

You can carefully use a small sharp knife, or try a Strawberry Stem Gem Tool for super fast and simple hulling!

I first spotted this nifty tool at Crate & Barrel, then found the Stem Gem on Amazon!

Oh how I love it!  It’s a simple way to hull the strawberries… insert, twist, and remove!

When you’re hulling several strawberries at once, it’s SUCH a timesaver.

How Do You Make Cheesecake Strawberries Stand Up?

So how do you get those pretty strawberries from not toppling over?

It’s actually SO easy!

All you need to do is simply slice off the pointed bottom tip of the strawberry, so you have a nice flat surface for your strawberries to balance on.

  • Blueberries
  • Coconut Flakes
  • Colored Sugar
  • Crushed Graham Crackers
  • Mini Chocolate Chips
  • Sprinkles

How to Make Santa Strawberries

Would you like to serve these up at your next Christmas party?

You can even turn them into Santa Strawberries!

1. Rather than cutting off the small tip of the strawberry as a float end, you’ll cut off the larger top with stem as your flat end.

2. Then cut your strawberry in half, horizontally.

3. Pipe some filling on the larger lower half, then gently place the top half back on… with the pointy tip facing up (that will be Santa’s hat).

4. Add an extra dab of filling on top of the pointy hat (like a fuzzy white ball on the end of Santa’s hat)

5. Carefully press on 2 small candy eyeballs to the white filling in the middle, and Santa is done.

SO cute and festive!!

Cheesecake Strawberries

Ingredients 

  • 12 large Strawberries , (washed and dried)
  • 8 ounces Cream Cheese, (softened)
  • ½ cup Powdered Sugar
  • 1 teaspoon Vanilla

Instructions 

  • Remove stems and clean out the center of the strawberries using your paring knife or Stem Gem. (my new best friend!)
  • Cut off a bit of the strawberry on the bottom. This will allow them to stand up when displaying them on your plate or serving dish!
  • In mixing bowl, combine cream cheese, powdered sugar, and vanilla. Beat until smooth and creamy.
  • Transfer cream cheese mixture in pastry bag or ziploc with the corner snipped off. I used a pastry bag and Wilton Star Tip.
  • Pipe cream cheese into strawberry centers, and you’re done! So EASY!
