Ingredients
- 3 lbs. Boneless Skinless Chicken Breasts fresh or thawed
- 20.75 oz. Panda Express Sweet Chili Sauce {1 bottle}
- 20 oz. Dole Pineapple Chunks {1 can}
- ½ White Onion chopped
- 1 Red Bell Pepper chopped
Instructions
- Pour 1/2 cup of Pineapple Juice into Crockpot {from can of pineapple chunks}.
- After 3 hours on HIGH or 6 hours on LOW, drain juices from crockpot
- Remove chicken, and cut up into pieces on a cutting board, then transfer back into crockpot.
- Mix together Sweet Chili Sauce, Pineapple Chunks only {drain remaining juices and toss}, Peppers, and Onions, and stir well.
- Pour mixture over chicken, and cook on HIGH for 30 more minutes {covered}, or until done. ENJOY!

Do you cut up the chicken into chunks for the crockpot sweet fire chicken or do you leave the breast whole?

Hi Connie ~ after cooking for 3 hours, you’ll remove chicken, and cut up into pieces on a cutting board, then transfer back into crockpot. Then add the sauce mixture and cook for 30 more minutes, or until done. Hope that helps! 😉
