Crockpot Sweet Fire Chicken Recipe!
Ingredients
- 3 lbs. Boneless Skinless Chicken Breasts fresh or thawed
- 20.75 ounces Panda Express Sweet Chili Sauce (Sweet Thai Chili Sauce can be substituted)
- 20 ounces Dole Pineapple Chunks
- ½ medium White Onion chopped
- 1 medium Red Bell Pepper chopped
Instructions
- Pour 1/2 cup of Pineapple Juice into Crockpot (from can of pineapple chunks).
- Add chicken to crockpot, then cook on HIGH for 3 hours or LOW for 6 hours. (covered)
- After 3 hours on HIGH or 6 hours on LOW, drain juices from Crockpot.
- Remove chicken, and cut up into pieces on a cutting board, then transfer back into crockpot.
- Mix together Sweet Chili Sauce, Pineapple Chunks only (drain remaining juices and toss), Peppers, and Onions, and stir well.
- Pour mixture over chicken, and cook on HIGH for 30 more minutes (covered), or until done. ENJOY!

So I was wondering if this could be made on the stove. The reason why am asking is because I have a family of 8 to feed and my crockpot isn’t going to fit the amount that I need to feed 8. So I’m just wondering if there’s any other special instructions to do it on the stove?

Hi Cassandra,
You definitely can prepare this recipe using the stove top. You will want to cube the chicken before cooking, then fry in a skillet with some oil. Once the chicken is cooked through, drain the juices. In a separate pan, saute the onion and bell pepper in some oil until soft. Once both the chicken and veggies are done, combine both into one pan and add the sauce & pineapple, stirring well to combine. Then allow the complete dish to simmer for 10-15 minutes before serving.

Hi Connie ~ after cooking for 3 hours, you’ll remove chicken, and cut up into pieces on a cutting board, then transfer back into crockpot. Then add the sauce mixture and cook for 30 more minutes, or until done. Hope that helps! 😉
