When it comes to Fall, I’m all about the Autumn skies and Apple Pies. But do you know what else I love? Breezy days, falling leaves, and cozy nights at home filled with sweet treats my family adores. That’s why I’m completely in love with this Caramel Apple Cider Cookies Recipe! It’s basically all of your favorite flavors of Fall wrapped up into one soft, delicious cookie!

It takes just 6 simple ingredients to make the BEST Apple Caramel Cookies…

  • French Vanilla Cake Mix
  • Eggs
  • Butter or Oil
  • Caramels
  • Apple Cider
  • Cinnamon

How to Make Caramel Apple Cider Cookies:

It’s actually SO easy to make these Apple Caramel Cookies! Here’s what you’ll do…

  1. Unwrap caramels & cut into small pieces
  2. Whisk together Cake Mix, Apple Cider Mix, & Cinnamon
  3. Add Butter and Eggs
  4. Mix until well combined
  5. Fold in 1/2 of caramel pieces
  6. Chill dough in refrigerator
  7. Form dough into small balls
  8. Place remaining caramel pieces on top of dough balls
  9. Bake in oven
  10. Cool on racks
  11. Serve, Enjoy & DEVOUR!

How to Store Caramel Apple Cider Cookies:

These cookies will stay fresh covered in an air-tight container at room temperature for up to 3 days.

Caramel Apple Cider Cookies Recipe

Are you ready to meet your new favorite Fall cookie? This Caramel Apple Cider Cookies Recipe will have you serving up cozy cookies all season long!

Ingredients

  • 15.25 oz. Box Betty Crocker French Vanilla Cake Mix
  • 4 Packets Spiced Apple Cider Packets
  • 3/4 tsp. Ground Cinnamon
  • 1/2 cup Melted Butter, Canola Oil, or Vegetable Oil
  • 2 Large Eggs
  • 1 cup Kraft Caramel Pieces {about 20 caramels} – one 11 oz. bag will be more than enough

Instructions

  • Unwrap caramels, and cut each caramel into 8 tiny pieces {this will make them similar to the size of chocolate chips}
  • Set 1/2 cup of caramel pieces aside for later.
  • In large mixing bowl, whisk together dry cake mix, apple cider mix powder, and ground cinnamon, until well combined.
  • Then add in butter {or oil} and eggs, and mix with mixer on medium speed until well combined.
  • Fold in 1/2 cup of caramel pieces, and transfer dough to refrigerator for 1 hour to chill.
  • After dough has chilled, preheat oven to 350 degrees.
  • Roll cookie dough into small balls, and place a few caramel pieces from the remaining 1/2 cup of caramels on top of each dough ball.
  • Then place dough balls on parchment paper lined cookie sheets. {trust me… the parchment will help prevent the caramel pieces from sticking like glue to your cookie sheet} 🙂
  • Bake for 8 – 10 minutes, or until done. 
  • Allow cookies cool on cookie sheet for 1 – 2 minutes, then promptly transfer to cooling racks to let them finish cooling there. ENJOY!
  • Storage Tip: These cookies will stay fresh covered in an air-tight container at room temperature for up to 3 days.
