Searching for a magically delicious treat? These leprechaun-approved St. Patrick's Day Cookies are just what you need! So soft, and so irresistible... these sweet vanilla cookies loaded with Lucky Charms marshmallows are just begging you to have one more bite! Just 4 ingredients and your whimsical cookies are done!
13.25ouncesBetty Crocker Vanilla Cake Mix(if using a 15.25 oz. box, increase butter to 1/2 cup)
1/3cupMelted Butter(Vegetable or Canola Oil can be substituted)
2largeEggs
1 3/4cupsLucky Charms Marshmallows
Instructions
Gather your ingredients.
Separate 1 3/4 cups of Lucky Charms marshmallows from cereal, and set aside.
Combine Cake Mix, Melted Butter (or oil), and Eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
Then, with a large wooden spoon, gently stir 1 1/4 cups of Lucky Charms marshmallows into the batter, making sure not to break up the marshmallows as you stir.
Set the remaining 3/4 cup of Lucky Charms marshmallows aside for later. (You'll be using them to press onto the top of the cookies as soon as they come out of the oven.)
Cover dough and chill in refrigerator for 2 hours.
After dough has chilled, preheat oven to 350 degrees.
Line large baking sheets with parchment paper.
Form cookie dough into 1 1/2 tablespoon sized rounded balls and transfer to cookie sheet.
Bake on center oven rack for 7 - 13 minutes, or until done. (Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets.)
As soon as you remove cookies from oven, gently press a few Lucky Charms marshmallows on top of cookie, to give it a pretty finished look.
Allow cookies to cool on cookie sheets for 5 minutes.
Transfer cookies to wire racks to finish cooling, and ENJOY!
Notes
Butter: When it comes to cake mix cookies, salted or unsalted butter can be used, as the cake mix will have a little salt in it. However, I’ve found that salted butter will result in superior flavor.
Storage Tips: After baked, you can store these tasty cookies at room temperature in an airtight container for up to 3 days. That makes these cookies an ideal make ahead treat for St. Patrick's Day!
