3lbs.Boneless Skinless Chicken Breastsfresh or thawed
20.75ouncesPanda Express Sweet Chili Sauce(Sweet Thai Chili Sauce can be substituted)
20ouncesDole Pineapple Chunks
½mediumWhite Onionchopped
1mediumRed Bell Pepperchopped
Instructions
Gather your ingredients.
Pour 1/2 cup of Pineapple Juice into Crockpot (from can of pineapple chunks).
Add chicken to crockpot, then cook on HIGH for 3 hours or LOW for 6 hours. (covered)
After 3 hours on HIGH or 6 hours on LOW, drain juices from Crockpot.
Remove chicken, and cut up into pieces on a cutting board, then transfer back into crockpot.
Mix together Sweet Chili Sauce, Pineapple Chunks only (drain remaining juices and toss), Peppers, and Onions, and stir well.
Pour mixture over chicken, and cook on HIGH for 30 more minutes (covered), or until done. ENJOY!
