These Peanut Butter Kiss Cookiesdo the impossible... they make your favorite Hershey Chocolate Kisses even better! The best part is, with just 5 ingredients, they're such a cinch to make!
Mix Peanut Butter, 1 cup Sugar, Egg and Vanilla together in medium sized mixing bowl. Stir well.
Place dough in fridge, and refrigerate for 1 hour.
While waiting for dough to chill, line cookie sheets with parchment paper, and pour 1/4 cup sugar into small bowl and set aside.
After dough has been chilled, roll into small tablespoon sized balls, then roll around in small sugar bowl.
Place on parchment lined cookie sheets, approx. 2 inches apart. (do not flatten dough balls)
Bake at 350 degrees for 8 – 10 minutes, or until done.
Immediately after removing from oven, carefully place a Hershey Kiss in the center of each cookie, and gently push down.
Allow to cool slightly, then transfer to cooling rack to finish cooling. ENJOY!

How To Tell If Your Peanut Butter Cookies Are Done:
Your cookies will be light brown in color.
The Hershey Kiss shape will still be intact. (Try freezing your chocolate kisses in advance, to help minimize them melting while the cookies are baking.)
Look for small cracks in the finished cookies (see photo below)
Your cookies will still be soft... but not moist!
Are your cookies too hard? Try reducing the bake time.
