4thin sliced or flattened Boneless Skinless Chicken Breastsfresh or thawed
¼cupSoy Sauce
3tablespoonspacked Brown Sugar
1teaspoonGround Ginger
1Garlic Cloveminced
¼teaspoonBlack Pepper
20ounceDole Pineapple Slices can (use juice only for marinade… leave pineapple rings in the can and set aside to grill later)
Instructions
Combine all ingredients, including juice only from Pineapple Slices can, and stir.
Add mixture to freezer Ziploc bag, then place in the refrigerator to marinate overnight, turning and flipping a few times. Or… place directly in the freezer, for some pre-marinated chicken later! (just pull out of the freezer, and defrost in the fridge… letting all of the yummy flavors soak into the chicken).
When ready to cook, remove chicken from the bag, toss the marinade out, and get ready to grill!
Grill your pre-marinated chicken on the grill outside (8 minutes on each side at 400 degrees or until internal temperature of your chicken is 165 degrees), or on a grill pan inside.
Take the pineapple rings that you set aside, and grill those, too! (yum!)
Serve with a side of brown rice or white rice, and ENJOY!
Notes
To flatten your chicken breast to an even thickness, simply place it between two large pieces of plastic wrap. Then using the flat side of a meat mallet or tenderizer, gently pound your chicken breast flat, starting in the middle.
