1/2of fresh and firm Cucumberdrained (see instructions below to drain Cucumber)
2small cloves of Garlicpeeled
1 1/2tspfresh squeezed Lemon Juice
1Tbspfresh chopped Dill
1/8tspSalt
1/8tspPepper
Instructions
Peel skin from entire Cucumber.
Chop off ends and slice in half, down length of Cucumber. Using a spoon, scoop out all of the seeds down the center.
Roughly chop Cucumber and place pieces in colander, lightly salting each layer. (use 1 tsp Salt)
Place Collander in sink with 2 plates resting on top of Cucumber pieces. Leave colander in sink for 30-40 minutes, then remove and pat Cucumber pieces dry with paper towels.
Place cucumber pieces and all other ingredients in blender, and blend until well combined.
Pour contents into bowl with cover or mason jar with lid, and transfer to refrigerator.
Chill in refrigerator for at least one hour prior to serving, allowing flavors to blend together. ENJOY!
