Ingredients
4Flour Tortillas(buritto size)
1lbBoneless Beef Chuck Roast, cut into large diced pieces
1tbspOlive Oil
3ClovesGarlic, minced
1/4cupWhite Onion, finely diced
3/4cupBeef Broth
1cupGreen Enchilada Sauce
8oz.Green Chiles(two 4 oz. cans)
1/4tspSalt
1/8tspPepper
*optional: Hot Sauce(your favorite brand)
Instructions
On medium heat, pre-heat a large skillet with a tight fitting lid.
Heat your Olive Oil, then add Onion and Garlic and sauté for 1-3 minutes, until your garlic is fragrant and onions are translucent in color.
Add your large diced pieces of Beef Chuck Roast and Beef Broth to the skillet.
Bring to a boil, then reduce the heat to low and place the tight fitting lid on your skillet.
Simmer for 6-8 hours, or until the meat is very tender.
Once the meat is tender, shred or pull the meat right in the pot.
Then add the Chiles, Enchilada Sauce, Salt, Pepper and optional Hot Sauce.
Increase the heat to medium and simmer for 8-10 minutes, or until the sauce has reduced and thickened.
Heat your tortillas, then fill with 4 equal portions of the beef mixture.
Finally, hand roll your beef burritos and serve!

Variations: Green Chile Smothered Burritos - To serve your green chili burritos smothered, top them with some warmed green enchilada sauce, in addition to a dollop of sour cream, a spoonful of Pico de Gallo, and a generous portion of freshly shredded cheddar cheese.
How to Store Leftovers: Leftovers of this beef burritos recipe can be stored in an airtight container in the refrigerator for up to 3 days. You can also store your cooked beef for up to 2 months in the freezer.
