Using just 5 ingredients... none of which are flour, these Reese's Peanut Butter Cup Cookies are your solution to literally every... single... cookie temptation! They're so good, you'll even have to hide them from yourself!
Add Peanut Butter, 1 cup Sugar, Egg, and Vanilla to medium mixing bowl, and stir well.
Cover dough and transfer to refrigerator, allowing dough to chill for 1 hour.
While waiting for dough to chill, line cookie sheets with parchment paper, and pour remaining 1/4 cup of Sugar into small bowl and set aside.
Unwrap Reese's Peanut Butter Cups, and set aside so they're ready to go.
After dough has chilled, preheat oven to 350 degrees.
Form dough into small tablespoon sized balls, then roll each ball around in the small sugar bowl to coat with sugar.
Place dough balls on parchment lined cookie sheets, approximately. 2 inches apart. (do not flatten dough balls)
Bake at 350 degrees for 8 - 10 minutes, or until done.
Immediately after removing from oven, place a Miniature Reese's Peanut Butter Cup in the center of each cookie, and gently push down.
After adding Reese's to all cookies, immediately transfer to refrigerator, and chill for approx. 30 minutes - 1 hour, so they firm back up and don't melt. ENJOY!
