Ingredients
1poundBoneless Skinless Cod Filets(fresh or thawed)
1/4cupSalted Butter(1/2 stick, melted)
1Fresh Lemon(juiced)
1/4tspSalt
1/8tspPepper
1/4tsp*optional: Flat Leaf Parsleyor Italian Parsley
Instructions
Gather your grilled cod in foil recipe ingredients.
Rinse each cod filet under cold water, then pat dry with paper towels.
Spray generously sized sheets of aluminum foil with non-stick cooking spray (1 sheet per each cod filet)
Lay filets on individual sheets of aluminum foil, then drizzle each with Butter and Lemon Juice.
Season each filet with Parsley, Salt and Pepper to taste.
Then loosely fold foil over filets to hold liquid inside.
Cook for approximately 10 minutes on grill at 350 degrees. (no need to flip)
Your cod will be done when the filet flakes easily with a fork, and the internal temperature is between 130 - 135 degrees.
I recommend using a meat thermometer to closely monitor your cod. It is very easy to overcook cod. Undercooked cooked cod will be mushy in texture and translucent in color. Overcooked cod will be tough and chewy.
Once your filets are done, remove the filets from the foil and immediately discard the foil before serving. (to trap the odors and mess)
Serve topped with optional dried parsley flakes and some Homemade Tartar Sauce or Basil Pesto. You'll enjoy no mess, no odors, just mouthwatering delicious grilled cod!

Baked Lemon Cod Instructions:
Preheat your oven to 400 degrees.
Rinse each cod filet under cold water, then pat dry with paper towels.
Spray a 9x13 casserole dish with non stick cooking spray.
Lay your filets in the casserole dish, leaving space between each filet.
Then drizzle each filet with Butter and Lemon Juice, and season each filet with Parsley, Salt and Pepper to taste.
Bake in your oven for 9-11 minutes, or until the internal temperature reaches 135-140 degrees.
Once done, promptly remove the filets from the casserole dish, to ensure they are not overcooked.
