Ingredients
For the Cake:
1.5cupsAll-Purpose Flour
1cupsugar
1.5teaspoonsBaking Soda
1teaspoonGround Cinnamon
1/2teaspoonSalt
3/4cupVegetable Oil
2eggsslightly beaten
1teaspoonVanilla Extract
1.5cupsFinely Shredded Carrots
For the Glaze:
1cupPowdered Sugar
3ouncesCream Cheesesoftened
1tablespoonWhole Milk
1teaspoonVanilla Extract
Instructions
Preheat oven to 350 degrees.
In mixing bowl combine flour, sugar, baking soda, cinnamon and salt.
Once combined stir in oil, eggs and vanilla until well mixed. The batter will be the consistency of peanut butter {thick}.
Mix in shredded carrots. Once the carrots are added and mixed in the consistency thins down some but is still thicker than a normal cake batter.
Spread into greased and floured 9″ round cake pain. Bake for 40 to 45 minutes or until wooden pick inserted in center comes out clean.
Glaze
In a small mixing bowl beat the cream cheese until smooth.
Add the powdered sugar, milk and vanilla.
Pour glaze over warm cake. Allow to cool down and serve.
